Believe me!  Once you taste homemade pasta, you’ll never want to go back to store-bought. There is only one problem: no, it is not the preparation process, because Manu makes that quite easy… the problem is how addicting fresh pasta can be!  And that’s one thing I know for a fact. 🙂

Even as a professional chef, I always thought of pasta as labor intensive… well, that is, until I got my hands on a copy of Manu’s cookbook.  I am not kidding!  She makes the process absolutely seamless, and way less scary than you might think.

At first, she entertains us with personal stories of when she first learned, at an early age, how to make pasta with her Italian family at home in Milan…

… then Manu teaches how to make essential pasta dough recipes — such as the ‘know-by-heart egg pasta dough’ that we used to make our bow tie pasta — and the many fun forms that one can craft while shaping pastas.  In fact, some of the chapters are even organized by pasta form, such as hand-shaped, ribbon-cut, and stuffed pastas, as well as gnochi and gnudi.

Another whole chapter is dedicated to all kinds of Italian sauces such as pesto, lemon sauce, arrabbiata, gongonzola, and the list goes on and on.

And that is not all!  The book features all the details you’ve been wondering about the necessary ingredients, conversions, simple tools and equipment, and easy techniques, so that we can all master making pasta like a pro. After all, there is nothing like learning from an expert, right?

Instructions
To prepare the homemade bow tie pasta:
  1. Weigh the flour and mound it in a bowl. Make a well in the center of the mound. Crack the eggs in a separate bowl and pour them into the well.
  2. Beat the eggs with a fork until smooth. Using the tips of your fingers, mix the eggs with the flour, a little at a time, until everything is combined.
  3. Knead the dough for 5-10 minutes, or until smooth. Form into a ball, cover tightly with plastic wrap, and let it rest for 30 minutes before rolling it out.
  4. Dust 3 (10-by-15-inches) baking sheets with flour and reserve. Roll the dough out on a lightly floured surface and feed through a pasta machine, adjusting the settings to setting #7, or roll the dough by hand with a rolling pin, making the dough as thin and uniform as possible
  5. Using a crinkle-edge pastry wheel or a pizza cutter (if you don't have a crinkle-edge pastry wheel), cut the pasta sheets into 2 1/2-inch squares. A ruler can be used for measurement to cut uniform squares if desired. I did use it!
  6. To shape the bow ties, pinch each square in the middle with your thumb and index finger. Then, transfer to the floured baking sheets and repeat the above steps with the remaining dough.
  7. Cook pasta in a large pot of boiling salted water for approximately 2 minutes or until al dente (cooked but still slightly firm). Drain pasta in a colander and shake away excess water. Serve immediately tossed with the tomato basil sauce. Enjoy!
To prepare the tomato basil sauce:
  1. Heat oil in a sauce pan over low heat. Saute onion for about 2 minutes or until translucent. Add the diced tomatoes and water. Season with salt, cover, and let cook for about 10-15 minutes over low heat.
  2. Add basil leaves and stir. Pour sauce over cooked and drained pasta in a pot and mix well while cooking for about 1 minute. Serve immediately, topped with grated cheese (or shaved cheese like I did).
Recipe Notes

MY NOTE: If you don't use great quality canned diced tomatoes, you may need to add more seasonings (such as a bit of red pepper flakes), a dash of white wine, and/or sauteed minced garlic to make sauce more flavorful.

Creamy Chicken Bacon Pasta Bake

A Creamy Chicken Bacon Pasta Bake is what’s on the table… and we can’t get enough of it!  It is comforting, cheesy, yummy, and prepares within 30 minutes. It is one of those all-in-one dishes that can please a crowd while making life easy for the cook. Basically just our kind of a weeknight meal, right?! 😉

Our Chicken Bacon Pasta Bake is made with simple ingredients such as store-bought linguine pasta mixed with a creamy cheese sauce, shredded chicken, chopped bacon, and canned diced tomatoes…

…and of course, extra cheese was sprinkled on top right before putting the pasta in the oven to bake for about 10 minutes (just until the cheese melted). Fresh basil, oregano, and grape tomatoes garnished the dish beautifully… while smiles floated all around the table.  It was a vision!

It is exactly what I needed after a full day of work… but with dinner still yet to prepare for all those hungry bellies.  A girl’s gotta do what she gotta do — pull a dish like this from up her sleeve and make everyone happy. 🙂 But don’t just take my word — make this Creamy Chicken Bacon Pasta Bake… and then you will fully understand why we are so in love with it. Instructions
  1. Preheat oven to 350F/180C.
  2. Cook and drain the pasta according to the directions in the package and set aside.
  3. While pasta is cooking, melt butter in a large and heavy skillet over medium heat. Add the onion and sauté for 4-5 minutes until translucent. Do not let brown! Add the garlic powder, chopped bacon, and let cook, stirring constantly, for about 1 minute. Add the flour and stir to combine, then cook for 2 minutes, stirring constantly.
  4. Add the half and half, broth/stock, salt, and pepper. Whisk for 1 minute, in small circles around the frying pan, until it starts to thicken. Then add the diced tomatoes. Increase the heat to medium high and cook, stirring constantly, for around 5 minutes or until thick enough to coat the back of a metal spoon. Taste and adjust the seasonings if necessary.
  5. Add the chicken, cooked pasta, and cheddar cheese and mix through. Let it cook for around 1 minute on the stove, then remove from heat.
  6. Sprinkle with mozzarella cheese. Cover with foil and bake for 8 minutes or until cheese is melted. Remove the foil and bake for an additional 2 minutes. Serve while it is still hot, garnished with fresh basil leaves and oregano, if desired. This chicken bacon pasta bake can also be served with a sprinkling of grated Parmesan cheese and fresh grape tomatoes on top if desired. If you would like to, sprinkle on a bit of red pepper flakes, too.

Our One Pot Sausage Pasta is one of the easiest and most delicious dishes ever…  As in– “be a hero without putting a lot of effort into it”!  I am serious… All I had to do was lightly brown the sausage, sweat the onions, add milk, Ragú® Chunky Tomato, Garlic & Onion Sauce, pasta, salt, and cook everything together at once. To finish the dish, stir in cheese and sprinkle parsley on top. What could be easier than that?

Instructions
  1. In a large saute pan, heat olive oil over medium high heat and lightly brown the sausage. Reduce heat to medium and sweat the diced onions for a couple of minutes, stirring occasionally (don't let them brown!).
  2. Stir in the the warm milk, tomato sauce, pasta, and salt. If desired, add either a pinch of ground black pepper or red pepper flakes depending on how spicy you prefer. Bring mixture to a boil, cover, and reduce heat to low. Simmer for about 13-15 minutes, or until pasta is al dente.
  3. Turn off the heat and stir in the shredded cheese. If desired, sprinkle about 1/2 cup of chopped parsley over the pasta and serve. Enjoy!

Kale Pasta Salad

I am breaking bread with a wonderful lady today — who happens to be my favorite neighbor. For those who don’t know, my house has been for sale. Knowing that I will miss my neighborhood and especially Ms. C, I decided to make this hearty and tasty Kale Pasta Salad — as I way to thank her for always being so kind and helpful.

The first thing was to make a stop at Walmart to buy Barilla® Penne…

… and then preparing all the ingredients to assemble our dish such boiling the pasta, mincing the garlic, slicing the lemon, and chopping both the bacon and kale.

This kale pasta salad is a simple yet versatile dish that can be served either cold or warm, as a side or main pasta dish, all year round. Although kale is a cold crop, it’s available the entire year in the US. Our dish can be easily adapted to fit a vegetarian diet by simply omitting bacon from the recipe… and was inspired in one of my favorite Brazilian leafy dishes, Couve à Mineira.

To bring its flavor, I just had to cook the kale in medium-high heat until slightly wilted — softening its bitterness. I could not be more pleased… the kale pasta salad turned out fantastic combining different textures and also flavors (salty, garlicky, smoky, and mildly bitter).

Because temps are already on the high, I am serving it cold… and yes, I can already foresee Ms. C’s smile when she takes the first bite. I am foreseeing yours too…

Instructions
  1. Cook pasta in salty boiling water for about 12 minutes. Drain, rinse with cold water, and add to a large bowl. Set aside.
  2. In a large skillet or pan, heat 4 tablespoons of oil and add the minced garlic. Cook over low heat, stirring occasionally, for about 2 minutes. Don't let garlic turn brown! Add the cooked bacon and heat for about 1 to 2 minutes to bring out its flavor. Remove pan from heat, stir in 3/4 teaspoon of salt and 3/4 teaspoon of pepper. Pour mixture all over the cooked pasta, tossing well to combine. Set aside.
  3. Add the other 2 remaining tablespoons of oil and chopped kale to the same skillet or pan (without wiping it out) and let cook over medium-high heat for about 3 to 5 minutes or until kale is slightly wilted. Warming up the kale over medium-high heat brings out its flavor, avoiding get too bitter. Add kale to the pasta mixture with the lemon juice, and toss to combine. Let sit for about 5 to 7 minutes. When mixture has cool down, add the Parmesan cheese and toss. Taste pasta mixture, adjusting the seasonings if necessary.
  4. Chill kale pasta salad for about 2 to 3 hours (or more if necessary) and serve.
Recipe Notes

This kale pasta salad can be served warm if desired. In this case, place the Parmesan cheese on top just right before serving.

Barilla® Spaghetti with Meat Sauce

Nothing like Mother’s Day, don’t you think? My children and I love cooking together, as you know… and to celebrate the occasion, I received the special treat of queijadinha de laranja for dessert and an easy yet quite tasty Barilla® Spaghetti with Meat Sauce as the entrée—all prepared by my angels and me. 🙂 This is an Italian recipe, like many which were brought to Southern Brazil, a region greatly influenced by Italian immigrants.

It all started with a visit to Walmart — where we bought Barilla® spaghetti…

… followed by a few preparations in the kitchen, and then a delightful meal. I think this is our own way to celebrate family and togetherness– and for my seven and eight year-old to celebrate me, their Mommy.

Sometimes the best things in life are simple, yet full of meaning. They know all too well how to touch my heart… and “food” is written all over!

Following the Barilla® Spaghetti with Meat Sauce recipe was easy! We simply sautéed chopped onion, carrot, and celery in olive oil, browned lean ground beef in the same pan, then deglazed with white wine (optional), which I love and which makes the pasta even more delicious. Next we added diced canned tomatoes, seasoned with salt and pepper, let the meat sauce simmer, reduce, and thicken… and then tossed 1 lb. of cooked spaghetti in the cooked meat sauce. Then as a final touch, we topped the pasta with shaved cheese. Yummmm!!!

There was silence at first, followed by requests for seconds and even thirds. I chose just the right dish… it was hearty and so comforting — just like a mother’s love!

I miss my Mom! As you know, the Atlantic Ocean keeps us physically apart. I wish she were here to share with me and her granddaughters such a wonderful meal and loving moment. But no worries! I will let her know that if it is any comfort, I ate enough Spaghetti with Meat Sauce for both me and her. My own way of saying: “This is for you, Mãe!” 🙂

  1. PLACE a pot of water to boil. MEANWHILE, in a large skillet, sauté the onion, carrot and celery with the extra virgin olive oil. ADD the meat and cook until browned well. INCORPORATE the tomatoes and 1 cup of water, season with salt and pepper to taste and bring to a simmer.
  2. COOK pasta in the boiling water according to the package directions. DRAIN pasta and toss with sauce. TOP with cheese.
  3. OPTIONAL: After the meat is browned, you can deglaze the sauce by adding the wine and let it reduce all the way.

How to Color Pasta with Juice

How to color pasta with juice is something I have been learning about recently, and I would love to share this easy secret with you. So yes, from now on you won’t have to pay extra for stored-bought colored pasta… or even spend time making your own pasta from scratch with special colorings.

Simply obtain any regular dry pasta you prefer from the supermarket and color it yourself using vegetable juice. This is an ingenious technique similar to that of boiling pasta in wine. You can use beets, red cabbage, spinach or any other leaf vegetable, bell peppers, etc. The most important thing is to use sufficiently concentrated vegetable juice.

Coloring pasta with juice is a technique that not only infuses subtle flavors but also makes the dish more beautiful and fun. Ready to get started?

Instructions
  1. First, make the beet juice. Blend beet chunks and 1½ quarts of water in a blender until smooth. Strain juice and discard beet pulp. Reserve the beet liquid/juice.
  2. In a medium to large pot, bring the remaining 3 quarts of water and 1 Tablespoon of salt to a boil. Add pasta and cook for about 2-3 minutes or until bendable. At the same time pasta is cooking, bring 4 cups (or 1 quart) of the reserved beet juice, a sprinkle of salt, and vinegar to a boil over medium high heat in a large sauté pan.
  3. Using tongs or a pasta strainer, lift out partially cooked pasta from the pot and place in the sauté pan with the boiling juice. Cook pasta until al dente, stirring frequently, over medium-high heat. You may need to add another cup or two (or 1/4 to 1/2 quart) of the remaining beet juice to finish cooking the pasta. Once pasta is cooked, strain.

  5. You can sauté colored, strained pasta with oil and/or butter, garlic, herbs, cheese, and pretty much anything else that you want.
Recipe Notes

You can use red cabbage, spinach or any other leaf vegetable, bell pepper, carrots (although color won't be vibrant. Definitely, not a fave ingredient to color pasta), etc to color pasta. The most important thing is to use a concentrated vegetable juice to achieve a vibrant color.

Chicken Casserole Nests

Instructions
  1. Preheat the oven to 350 degrees F (about 180 degrees C).
  2. Prepare the sauce: In a medium stainless steel saucepan, mix together all ingredients until combined and bring to a boil over medium-high heat, stirring occasionally. Pour into a large Pyrex or casserole dish, and set aside.
  3. For the pasta nests: Arrange uncooked pasta nests on top of the hot tomato sauce, keeping each a bit of a distance from the others. Using a spoon, ladle some of the hot tomato sauce over each nest to moisten. In a medium bowl, mix together the cheeses and peas, and set aside.
  4. Pat dry the chicken with paper towels and cut into small pieces. Season chicken pieces with salt and pepper. In a medium non-stick skillet, heat the olive oil over medium-high heat and brown the chicken (about 2-3 minutes). Mix into the cheese-pea mixture. Spoon cheese-chicken mixture into the raw pasta nests. Cover baking dish tightly with aluminum foil (If necessary, grease the interior of the sheet with non-stick cooking spray in order to avoid the cheeses sticking to the foil). Bake for about 40-45 minutes. Remove foil and sprinkle grated Parmesan cheese on top of the pasta nests if desired. Serve chicken casserole nests hot (2 nests per person). A fresh salad or steamed vegetables, if desired, can accompany chicken casserole nests. Enjoy our chicken casserole nests!!!

Mac and Cheese Carbonara


Hello, y’all!  I hope you were excited about our last holiday side dish, my famous Mashed Sweet Potatoes with Coconut Milk, Bacon, and Cilantro.  This time I am going to be sharing with you Mac and Cheese Carbonara, a recipe adapted from Chef Bobby Flay.

I though this mac and cheese might be a great side dish to add to either our Thanksgiving or Christmas table — or as an everyday main dish as well.  Chef Bobby Flay’s Mac and Cheese Carbonara is a scrumptious variation on the traditional mac and cheese. Of course, there is nothing wrong with the traditional mac and cheese, but having something familiar on our plates with a new flavor can be exciting, don’t you think?

Mac and Cheese Carbonara

In case you didn’t know, the term Carbonara applies to an Italian pasta dish from Rome that was created in the middle of the 20th century, and is based on eggs, cheese (Pecorino Romano or Parmigiano-Reggiano), bacon or pancetta, and black pepper.  Although spaghetti is the customary pasta used, we will be using elbow macaroni to compose our mac and cheese carbonara… A real fusion between American and Italian cuisine!!

Instructions
  1. Preheat oven to 350 degrees F (about 177 degrees C). Grease the bottom and sides of a 3-quart baking dish with butter and set aside.
  2. In a large saute pan, heat the olive oil over medium heat. Add the diced bacon and cook until golden brown. Remove with a slotted spoon to a plate lined with paper towels.
  3. Add the garlic to the pan and cook until lightly golden brown. Whisk in the flour and cook for 1-2 minutes. Next, whisk in 6 cups of the hot milk, increase the heat to high, and cook, whisking constantly until thickened, for 3-5 minutes. Whisk in the light beaten egg yolks until incorporated and let cook for 1- 2 minutes, stirring constantly. Remove from heat and whisk in the chopped chives, cayenne, and all of the cheese until completely melted. Season with salt and pepper. If the mixture appears too thick, add some of the remaining milk 1/4 cup at a time.
  4. Mix in the cooked macaroni, reserved bacon and chopped parsley, and stir until combined. Transfer the mixture to the prepared pan. Combine together additional Asiago, Cheddars, Mozzarella, and Parmigiano cheeses in a bowl and sprinkle evenly over the top of the macaroni. Bake in the oven until heated through and the top is lightly golden brown (about 12-15 minutes). Remove from the oven and let rest 10 minutes before serving.

Gnocchi with Greens, Bacon, Grilled Corn, and Tomatoes

If you are frequent reader of mine, you already know that I started participating in the Secret Recipe Club – SRC as of last month. Every month, each participant is assigned to a different  participant’s blog, from which we can pick one of their many recipes to prepare. Well, this month I have been assigned to Teaspoon of Spice .  Its authors, Serena Ball and Deanna Segrave-Daly, are two registered dietitians.  From their blog’s many delicious, healthy recipes, I picked one that really popped, both to my eyes and stomach. Once adapted, it  became our Gnocchi with Greens, Bacon, Grilled Corn, and Tomatoes a quick yet nutritious family meal!  

Gnocchi

I specifically picked gnocchi dish not only because I am a ‘pasta’/dumpling lover, but because it is a nutritious and complete meal.   I think this fits the spirit of their blog!

I have to confess that although their gnocchi is simple yet very flavorful– and I do enjoy it that way that it is, I have modified the gnocchi recipe a bit to accommodate a typical dish from Brazil — Collard Greens a la Mineira — as well as frequent ingredients from my Brazilian table– e.g. corn and tomatoes.  Yes, you can say that I have Brazilianized Deanna’s amazing gnocchi!  I just hope that you don’t mind, Deanna!!!  In my take on Deanna’s recipe, you will be eating two dishes in one: Gnocchi and Collard Greens a la Mineira.

Instructions
  1. Wash the collard greens or kale under cold running water. Shake to remove the excess water. With a sharp knife or your hands, cut off the leaves from their tough stems. Gather them together into piles. Take each pile and roll it tightly. Cut the rolled leaves into thin strips crosswise (about 1/4-inch strips).
  2. In a medium pot, bring 6 cups of water to a boil over high heat. Place the trimmed leaves in a colander. Pour the boiling water over the leaves to slightly wilt and then drain well to remove all the added liquid (you can shake the colander or press down gently on the greens with a spoon). Reserve.
  3. In a large pot of boiling salted water, cook gnocchi according to directions on package (shaving a minute off of cooking time).
  4. Meanwhile, cook the diced bacon in a large, heavy skillet over medium heat until there are no more pink, white, or translucent areas on the bacon. If necessary, add 1 Tbsp oil to sauté garlic, stirring often, until it starts to become lightly browned. Add greens and salt, pepper, and the bouillon powder. Cook, stirring often, for about 2 to 3 minutes or until greens are tender but bright green. Taste and adjust seasonings.
  5. When gnocchi is done, remove with slotted spoon and add to skillet and toss well. Stir in 1/4 cup of pasta/dumpling water to keep the pasta moist. Cook for 1 -2 minutes, stirring frequently yet gently. Add the grilled corn kernels and tomatoes. Toss well. Remove gnocchi from heat and toss with cheese. Serve immediately!
