Quick Nutella Funfetti Donut Cookies

Nutella Funfetti Donut Cookies are easy to prepare in less than 30 minutes. They are made with a mixture of 5 simple ingredients and don’t require pre-chilling in order to bake.

Cookies?  My children love them… “What kind?” Well,  ALL of them! 🙂 When I am not so busy and they want to have a taste of one of their favorite treats, I prepare these quick, easy and delish Nutella Funfetti Donut Cookies. Oh, you ought to see their faces!

They are made from a mixture of 5  simple ingredients, including Nutella (yes, I said the magic word)… and then garnished with confetti sprinkles, for gobbling up in the blink of an eye.

One of the advantages of these cookies in the shape of a donut is that they don’t require any pre-chilling in order to bake. Another one is that our Nutella Funfetti Donut Cookies are guilt-free since they are small-portioned.  I can already see your smile!!

To prepare these cuties, all you need to do is to mix together Nutella, melted unsalted butter, an egg, flour, and sugar in a bowl…

Then place about 2 teaspoons of the cookie mixture into each ring of a mini donut baking pan and bake for about 7-8 minutes.

Decorate them with piped Nutella, and top with confetti sprinkles.  And there you have it… The cutest and most decadent cookies are ready to delight both the eyes and the palate of the most demanding of children (and adults too!).

As you can see, they are easy to prepare and fun to decorate — a great cooking project for mom and kids to do together.

Usually, a batch is enough to give away as edible presents and still have a good amount to devour along with a cup of milk. But if you are a cookie monster like my daughters, the whole thing will disappear like magic, because according to them (and me too… shhhh) these are simply addictive!

  3. Using a teaspoon for measurement, scoop about 2 teaspoons at a time and place into the well of a mini donut baking pan. Make sure to press dough and mold in such a way that the hole in the center is not covered with dough. Bake for about 7- 8 minutes and let cool. Invert pan over a large baking sheet and if necessary beat with a spatula to remove them from the mold. Pipe Nutella on top of each cookie and decorate with confetti sprinkles. Clean the donut baking pan and repeat the process. Yield: 36 cookies.

Although decadent, they are still guilt-free since they are small-portioned.  😉

To prepare these Rabbit Hole Cookies, all you need to do is mix together Nutella, an egg, melted unsalted butter, flour, and sugar in a bowl. 4-Ingredient Fluffy Boozy Orange Tarts

4-Ingredient Fluffy Boozy Orange Tarts made with pie crust, sweetened condensed milk, whipped cream, and orange liqueur.  They are easy, delish, and refreshing!

Do you ever feel the need to eat something scrumptious, yet that can be prepared in the blink of an eye? Well, I do… all the time. Afternoons bring a cry of desperation to satisfy my sweet tooth.  Our Fluffy Boozy Orange Tarts, made from only 4 ingredients, not only are able to satisfy your cravings but also make the prefect treat for get-togethers and parties. They are delish, beautiful,  and can be easily prepared in less than 30 minutes. Cool? 😉

To make seven of these, cut a store-bought pie crust into 7-8 circles with a cookie cutter. Place crusts into small tart pans and bake for about 7-8 minutes.

Then, let cool and fill them with a mixture of sweetened condensed milk, whipped cream, and orange liqueur (or orange essence for a non-boozy version). Refrigerate until filling has set. Right before serving, sprinkle the orange zest and garnish with the berries and mint if desired. Serve and enjoy!

See? Easy peasy, right?

  2. Using a 3 1/2-inch round cookie cutter, cut the thawed pie crust into 7-8 circles on a lightly floured surface.

Easy Dulce de Leche Churro Blondies

Fudgy and decadent churro blondies filled with dulce de leche that are easy to make and can be served with your favorite ice cream.

Desserts have always been at the top of my list of faves… especially moist cakes, brownies, and blondies (brownies without chocolate). Let me tell you that these fudgy dulce de leche churro blondies are among the best. They are one of those comforting, rich treats that you have to try real hard to keep from devouring one right after the other.

They are fortunately easy to make. Combine the batter ingredients in the bowl of an electric mixer, pour half of it into a greased baking pan, spoon dulce de leche on top, and finish by layering on the other half of the batter and sprinkling with a cinnamon-sugar mixture.

Bake at 350 degrees F for about 35 minutes and voila! You have one of the most scrumptious treats ever — just like our dulce de leche churro trifle!

Yep, easy peasy!!!

It goes without saying that the contrasting texture of the fudgy blondie with the crisp/crumbly cinnamon-sugar topping can wow any palate.

If you want to make them even more special, serve these churro blondies with a drizzle of softened dulce de leche and a glass of milk… or heat them up and top with a scoop of ice cream. Man, oh man… it is like hearing a choir of angels singing! 😉

  1. Preheat oven to 350°F. Lightly grease a 8x8- inch baking pan with cooking spray and then line with parchment paper.
  2. In a large bowl of a stand mixer, cream together butter and sugar. Mix in eggs and vanilla, followed by salt, baking powder, cinnamon, and flour. Mix until smooth. Pour half of the blondie batter and smooth into an even layer in prepared baking pan. Spoon dulce de leche onto layered batter; then, spoon and smooth the remaining blondie batter on top.
  3. In a small bowl, mix 3 Tablespoons sugar with 1 1/4 teaspoons cinnamon and sprinkle on the top. Bake for 30-35 minutes.
  4. Let dulce de leche churro blondies tcool before slicing. Store in an airtight container for up to several days. Serve them by themselves or with a drizzle of dulce de leche on top (and your favorite ice cream if desired).

To make a batch of these, combine peanut butter, an egg, and all-purpose flour together. Roll into balls, make a small hole in the center, spoon in a bit of jelly, and bake them at 350 F for about 8 minutes. Easy peasy, right?

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, combine the first 3 ingredients until obtaining a homogeneous mixture. Using a cookie scooper or a tablespoon as measurement, roll dough into balls, place onto the lined baking sheet, and make a hole in the center using the stick of a wooden spoon. Don't poke the hole all the way through-- just more or less halfway deep.
  3. Fill each hole with about 1/2 teaspoon of jelly. Bake for about 7-10 minutes or just until cookies set.
  4. Transfer baking sheet to a rack and let cookies cool. Then, pipe a bit of peanut butter on top of each cookie. If you are not on a sugar-free diet, you can sprinkle a bit of sugar sprinkles on top of the piped peanut butter if desired. Enjoy these peanut butter and jelly cookies with your favorite beverage.
Recipe Notes

1. Variations: Use Nutella, cookie butter, or another nut butter instead of peanut butter. If using Nutella, fill the hole with it once cookies bake and have cooled.
2. If you have a sweet tooth, you can add about 1/3 cup sugar or a baking sugar substitute to the dough.

4-Ingredient Strawberry Brigadeiros (Moranguinho)

Strawberry Brigadeiros are fudgy candies made from sweetened condensed milk, strawberry gelatin, unsalted butter, and granulated sugar. They are cute and make great party treats!

Valentine’s Day is almost here….  Who is going to be your Valentine?  Mine enthusiastically devoured these gluten-free fudgy and delish Strawberry Brigadeiros, which are simply called moranguinho in Portuguese. Aren’t these Brazilian candies cute?

They are also quick and easy to make. That’s right! All you need are 4 ingredients: sweetened condensed milk, strawberry gelatin, unsalted butter, and granulated sugar.

Combine the first 3 ingredients in a non-stick pan and cook over medium heat for about 5 minutes or until the bottom of the pan can be seen. Spread onto a greased plate and let cool. Then roll into balls, shape like strawberries, and sprinkle sugar on top. Garnish with a clove and place into bonbon cups. See? Easy peasy!

They can be served on a tray or placed into bonbon boxes to surprise your Valentine with something unique.

Instructions
  1. Whisk the condensed milk and strawberry gelatin powder together until obtaining a homogeneous mixture (without lumps). Then, stir in the butter.
  2. Cook in a medium non-stick saucepan or skillet over medium-low to medium heat (large burner), stirring constantly, until the mixture thickens and starts to peel away or show the bottom of the pan when you scrape it with your wood spoon (about 5-8 minutes). The strawberry fudge mixture should be thick enough to reveal the bottom of the pan for a couple of seconds before the mixture levels out again.
  3. Strawberry-brigadeiros
  4. When the strawberry fudge is ready, remove from the stove and spread mixture onto a plate greased with butter.
  5. Let cool to room temperature before starting to roll them into balls with greased hands. Use a 1 teaspoon measuring spoon as measure. Then, shape them into strawberry shapes and dredge gently in sugar or sprinkle sugar all around until totally covered. Place into paper bonbon cups and garnish each with a clove as a "stem," as seen in the pictures. Enjoy!

Hello, lovelies! We whipped up a huge batch of the best cookies EVER– No Bake Cookie Butter Oatmeal Cookies (a.k.a. Wreath Cookies)– to give away to some deserving folks, such as a few of my kids’ teachers. Aren’t they cute and festive?

They are made with simple ingredients like rolled oats, cookie butter, brown sugar, unsalted butter, vanilla, coconut flakes, DOLE Fruitocracy, candy melts, dried cranberries and pistachios.

Pretty much all one has to do is to mix some of the ingredients together, shape the mixture into small wreaths, refrigerate, and cover with melted white chocolate or candy melts, and then sprinkle chopped pistachios and dried cranberries on top. Easy peasy!

Besides not requiring baking, they are gluten-free, egg-free, and can be dairy-free. They make beautiful edible gifts for the holidays, as you can see!

Instructions
  1. In a large heat-proof bowl, combine the oats, coconut flakes, and vanilla together. Set aside.
  2. In a medium sauce pan, stir together Dole Fruitocracy, sugar, and butter or coconut oil. Cook over medium heat, stirring occasionally. Make sure to full boil for ONE minute.
  3. Immediately pour over the oatmeal mixture and stir thoroughly and rapidly. Stir in the cookie butter or peanut butter very well, until obtaining a homogeneous mixture. Make sure that mixture is of a consistency to be able to cling on to your finger when held upside down for at least a couple of seconds; otherwise, stir in a bit more oats. Let cool just enough to handle.
  4. Spoon cookie size scoops (about one tablespoon), roll into balls, place onto waxed paper, flatten with the palm of your hand, and then using the stick of a wooden spoon make a hole in the center of each cookie. Remold the outside of each cookie with your fingers to form a round wreath. Refrigerate and let set until firm, about 20-30 minutes.
  5. About 2-3 minutes before removing the cookies from the fridge, melt the candy melts or white chocolate until smooth and spread on top of each cookie using the back of a teaspoon. Sprinkle the chopped pistachios and dried cranberries on top and let set. Enjoy!

No Bake Eggless Sweet Potato Flan (Pudim de Batata Doce)

It’s time for a dessert that is popular the whole world wide: the timeless, creamy, smooth flan or pudim. Since sweet potatoes are in season, and Thanksgiving is coming up next month, today we’ll be preparing an easy and delish No Bake Eggless Sweet Potato Flan, known in Brazil as Pudim de Batata Doce… and highly esteemed in my home state of Pernambuco.  Is your mouth watering yet?  Well, mine is– big time!!!!

I get super excited just thinking about this sweet potato flan.  This is just one of those treats that has the power to transport me home — just like our pumpkin pie flan… It is all that one could ever hope for from a treat and more… It’s rich and super comforting!  Although this flan is served chilled, it carries all the warmth of the spices that are inside!!!

The only difference between our recipe and the one we prepare down in Brazil is that this one doesn’t incorporate any eggs but gelatin instead. Because of this, it is refrigerated instead of being baked.

 I am telling you, this is a great autumn dessert, and also a happy surprise for Thanksgiving.  It is a great alternative to sweet potato pie — and by the way, perfect for those who are gluten-intolerant or need to be on an egg-free diet.

One of the main advantages of this sweet potato flan is that it doesn’t require any baking, always guaranteeing that wonderful smooth texture typical of a well-prepared flan. All you have to do is prepare the caramel sauce (place ingredients in a pan and let them take on color), blend all the flan ingredients in a blender, and refrigerate.  There is no mystery to it!!!

If desired, it can be served decoratively with a meringue on top. See? Easy peasy!!!

Instructions
  1. In a large pot, boil peeled sweet potatoes in water over high heat for about 12-15 minutes or until fork tender. Drain water and roughly mash sweet potatoes with a fork while still hot. Place roughly mashed sweet potatoes (while still hot) into a blender with sweetened condensed milk, melted butter, salt, and spices. Blend well until obtaining a smooth mixture and set aside. In a small cup, stir well the gelatin in water until dissolved and let sit for about a couple of minutes. Pour the dissolved gelatin into the blender and blend sweet potato-gelatin mixture until well combined. Set aside.
  2. Prepare the caramel. In a medium heavy-bottom saucepan, stir sugar and water until combined. Heat mixture over medium-low heat, stirring occasionally with an wooden spoon, just until it starts to boil. After this point, do not stir mixture anymore! Using a kitchen brush that has been moistened with water, brush down the sides of the pan occasionally, until the mixture starts to color around the edges, about 5 to 10 minutes. Gently swirl the pan once to even out the color and prevent the sugar from burning in isolated spots. Continue to cook until the sugar turns light to medium amber. Pour caramel into a 10-inch ring mold and using kitchen gloves, carefully swirl the ring mold to spread caramel on the sides and bottom pf the mold. Let sit for about 5 minutes or until it hardens.
  3. Pour the sweet potato mixture into the mold, smooth it out with the back of a spoon or spatula, cover mold with aluminum foil, and refrigerate for at least 8 hours or until sweet potato flan is well set.
  4. To unmold flan, carefully run a knife around the edges to loosen the flan and place a serving plate on top of the ring mold. Invert flan onto the plate and serve by itself or topped with piped meringue.
  5. Prepare the meringue. Using an electric mixer on high, beat egg whites until loose and foamy (about 2 minutes). With motor still running, gradually add granulated sugar and beat until stiff, shiny peaks form (about 5 minutes). Gradually add powdered sugar and beat for a couple of minutes. You may have to stop the mixer to to scoop the sugar off of the sides of the electric mixer bowl using a spatula.
  6. Pipe meringue over flan decoratively and then use a kitchen torch to toast meringue, if desired.

4-Ingredient Dulce de Leche Apple Hand Pies (a.k.a. Appoffee hand pies) made in 30 minutes or so and served by themselves, with a drizzle of dulce de leche, or with a scoop of ice cream.

Unbelievable! September is almost here… that means that fall, my favorite season, will officially start soon. I thought it would be the perfect occasion to prepare these quick and easy, 4-ingredient dulce de leche apple hand pies.  These are a fuss-free take on the Brazilian Pastel de Maçã com Doce de Leite, as well as an adaptation of the English Banoffee Pie although these are made with apples instead of bananas. They are small (portion controlled) yet quite indulgent!

Dulce de Leche Apple Hand Pies -- Apploffee Hand Pies

All one has to do is to cut pie crusts into rounds using a cookie cutter, fill the rounds with a spoonful of dulce de leche/caramel spread and canned apple pie filling. Then, brush the edges with an egg wash, close the hand pies…

… and bake for about 11-13 minutes. Voila! Here comes the best part: devouring them… either with a drizzle of dulce de leche or caramel, or with a scoop of ice cream. Yummm!

Instructions
  1. Preheat the oven to 375 degrees F. Line a large baking sheet with parchment paper and set aside.
  2. Unroll both pie crusts on a floured surface according to the directions on the package. Using a 4-inch round cookie cutter, cut crusts into rounds. Use all the trimmings to make a ball of dough, roll out on a floured surface, and cut into more rounds. You will end up with a total of 11 circle or rounds. Reserve.
  3. Fill a half side of each round with 1 tablespoon of dulce de leche and top it with 3 to 4 small pieces of apple pie filling. Make sure that there is at least a 1/4 to 1/3-inch border from the edges.
  4. Brush the edges of the crust with the egg wash, then fold the empty side of the crust over the top of the filling. Pinch your fingers along the edges to seal and then use a fork to make crimp marks all the way around. Transfer the dulce de leche apple hand pies to the lined baking sheet and brush the top of the pies with more egg wash.
  5. Bake for 11-13 minutes or until the crust is lightly golden brown. Let cool for 10 minutes on the baking pan, then remove them with a large spatula. Serve by themselves, with a drizzle of dulce de leche/caramel, or with a scoop of ice cream. Enjoy!

What to serve for guests at a summer get-together that is refreshing and homemade, yet won’t take much time away from the kids? I say Dulce de Leche Churro Trifle. 😉 For me, it is the taste of childhood…

I still remember how churros filled with doce de leite (dulce de leche or caramel spread) used to be one of the most indulgent and fun treats to have as a child — aside from brigadeiros, of course.  Every trip to the mall or to a street market would easily turn into the perfect excuse to have churros with dulce de leche — always bringing a smile to my face that spread from one chubby cheek to the other. 🙂

But you know, frying is definitely not one of my favorite things to do in the kitchen — especially during hot weather.  At this time of the year, I crave chilled treats more than anything else… but they still have to be comforting!  So how to reconcile the two?  I think I have found the perfect formula (at least in my mind ): layering soft vanilla-flavored brigadeiros, dulce de leche, and cinnamon sugar into shot glasses and serving them chilled. 😉  A dessert so easy to prepare and so rich too that even a child could make them and looove eating…

Instructions
  1. In a large non stick saucepan, stir well the sweetened condensed milk with the melted butter. Cook over medium heat, stirring constantly with a wooden spoon, for about 10-15 minutes or until mixture has thickened and starts pulling away from the bottom of the pan.
  2. Remove from the heat and stir in both the vanilla and 1/2 cup of heavy cream until obtaining a creamy, homogeneous mixture. Let cool for about 10 minutes and then place 2 Tablespoons into each shot glass.
  3. In a medium bowl, stir in the remaining 1/4 cup of heavy cream with 1/2 can of dulce de leche until obtaining a homogeneous mixture. Place 1-2 tablespoons of the dulce de leche mixture into each shot glass. Top with 2 Tablespoons of the cooked condensed milk mixture.
  4. Mix the sugar with the cinnamon in a small bowl. Sprinkle about 1-2 teaspoons of the sugar-cinnamon mixture on top of each trifle, and then pipe beaten whipped cream on top -- only if desired. Refrigerate and serve either as prepared or drizzled with any remaining dulce de leche/heavy cream mixture. YIELD: 7-9 shot glasses
