If using FRESH COD, skip the desalting process. Pat dry the fillets with a paper towel and season both sides of the cod.

Heat oil in a large nonstick skillet then sauté crushed red pepper flakes and garlic for 1 minute.

Prepare the wine sauce. Once cooked, transfer the sauce to a bowl and set aside until needed.

Wipe the skillet well and heat it over medium heat. Add oil and place seasoned cod fillets in.
