Preheat the air fryer to 390°F (199° C). Scrub potatoes and cut into wedges about ½ -inch thick.

Then, soak the potato wedges in cold water for 20-30 minutes.

Drain and pat them dry with paper towels.

Toss the wedges with olive oil, garlic powder, Italian seasoning, salt, pepper, and Parmesan until well coated in a large mixing bowl.
