The Best Beef Stroganoff

Slow Cooker Beef Stroganoff recipe is the easy, healthy version of the classic, making the perfect keto easy dinner for busy weekdays.

It consists of tender beef and mushrooms in a rich and creamy sauce.

– Olive oil  – Lean beef stew meat – Salt – Ground black pepper – Sweet paprika – Small onion

Add seasoned beef in a single layer (do NOT overcrowd the pan). Brown for about 4-5 minutes on each side.

Pour the beef into the slow cooker. Using the same skillet, cook onions and mushrooms over medium heat for 3-4 minutes.

Add the mushrooms, onion, and garlic to the slow cooker. Pour the broth, wine, and tomato paste into the slow cooker, stirring well.

Cover the slow cooker and set on HIGH for 4 hours, or LOW for 6-8 hours.

Uncover, stir in Greek yogurt, and adjust salt and pepper if needed.
