Ingredients

For the Pizza:

  • 1 ready-made pizza dough I used one from the Rustic Crust brand
  • 2 tablespoons ready-made tomato sauce
  • 1 cup shredded mozzarella cheese
  • Shrimp al Aglio e Olio (recipe follows)
  • 1 heart of palm 9 slices**
  • 4 cherry tomatoes sliced in halves
  • Palm oil to sprinkle over the topping optional** (SEE SUBSTITUTIONS on the notes)
  • 2 tablespoons fresh cilantro or parsley chopped
  • Lemon wedges to serve on the side of the pizza squeeze lemon over pizza before eating

For the Shrimp al Aglio e Olio:

  • 2 tablespoons olive oil
  • 1 pinch dried red pepper flakes
  • 2 garlic cloves minced
  • 8 jumbo raw shrimp peeled, deveined, and tail off
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh cilantro or parsley chopped

Instructions

To Prepare the Shrimp al Aglio e Olio:

  • In a large skillet, heat oil over medium-high heat.  Add the red pepper flakes and minced garlic.  Sauté for about 30 seconds to 1 minute, stirring occasionally.  Add the shrimp and sauté until it starts to turn pink (about 1-2 minutes). Reduce heat to medium, and add salt, ground pepper, and lemon juice.  Let cook for another 30 seconds.
  • Remove from heat and stir in cilantro/parsley.  Reserve to use in the shrimp pizza topping.

To Assemble the Pizza:

  • Preheat the oven to 425ºF (220º C).
  • Place the pizza dough on a baking sheet lined with parchment paper.  Spread the tomato sauce over the pizza dough and sprinkle the mozzarella on evenly.
  • Arrange the shrimp al aglio e olio, hearts of palm, and tomatoes on the pizza dough.  Drizzle the toppings with a little bit of palm oil (optional).
  • Bake for about 10 minutes (or follow instructions on the package of the pizza dough).
  • Remove from oven, sprinkle the chopped cilantro/parsley, and serve immediately with wedges of lemon on the side. Pizza can be accompanied by a fresh salad and a glass of white wine.  Enjoy!

Recipe Notes

SUBSTITUTIONS: Both the lemon and the palm oil make this pizza highly flavorful. If you don'yt have palm oil, mix about 2 tablespoon of olive oil with ½ to 1 teaspoon of  ground turmeric. The flavor will not be the same yet it will still be quite yummy.
