Air Fryer Potato Wedges

Air Fryer Potato Wedges are super crispy on the outside and tender on the inside, making the perfect easy side dish for this air fryer chicken thighs or an appetizer for dipping in ketchup or your favorite sauce.

Equipment

Ingredients

  • 3 large Russet potatoes do NOT remove the skin
  • ¼ cup olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning or other of your choice such as Cajun seasoning, Greek seasoning, etc
  • 1 teaspoon salt or to taste
  • ¼ teaspoon freshly ground black pepper or to taste
  • ½ cup freshly grated Parmesan
  • Chopped fresh parsley for garnish

Instructions

  • Preheat the air fryer to 390°F (199° C).
  • Scrub potatoes and cut into wedges about ½ -inch thick. Depending on the size of the potatoes, they will yield about 8-12 wedges each.
  • Then, soak the potato wedges in cold water for 20-30 minutes. Drain and pat them dry with paper towels. They must be dry; otherwise, they will steam instead of air frying and will get soggy instead of crispy!
  • Toss the wedges with olive oil, garlic powder, Italian seasoning, salt, pepper, and Parmesan until well coated in a large mixing bowl.
  • Place potato wedges in the air fryer basket and cook for 15 minutes.  It is key to NOT overcrowd the air fryer in order for them to cook evenly. If needed, cook in smaller batches, always in a single layer.
  • Toss and cook for additional 10- 12 minutes, tossing every 5 minutes or so until crispy.
  • Serve them with chopped fresh parsley on top and a small bowl of ketchup on the side (or your favorite sauce).

Recipe Notes

TIPS
  • Scrub the skin in order to remove excess dirt.
  • Try to cut the potato wedges evenly, about ½-inch thick (neither too thin nor too thick).
  • Soak the wedges in cold water. This will remove starches from the exterior of the potatoes.
  • Pat dry the potatoes very well before adding oil; otherwise. they will steam instead of "frying".
  • Do not overcrowd the air fryer! Cook in smaller batches in a single layer. Toss them once and a while in order to cook them evenly.
  • Before serving, heat all batches in the air fryer at 300 F for about 5 minutes, or until hot. They make a great side dish or appetizer and pair well with a bunch of dishes.
STORAGE
Store our crispy air fryer potato wedges is in an airtight container in the fridge. They will stay fresh for 2-3 days.
Reheat them in a preheated Air Fryer at 300 degrees F for about 5-8 minutes or until hot. Do not use the microwave; otherwise, they will become soft and soggy!
