For the apple filling:
- 6 apples peeled and sliced (Choose firmer apples that are ideal for baking such as Gala, Pink Lady, and Granny Smith). You can use one variety or a mix of tart and sweet apples.
- ¼ cup granulated sugar
- 1 ¾ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 tablespoon fresh lemon juice
- 4 tablespoon unsalted butter melted (To make it dairy-free, use the same measurement of coconut oil or dairy-free butter)
- ¼ cup all-purpose flour gluten-free. But if you want, you can use the same measurement of regular flour
- ⅓ cup water
- 1 teaspoon vanilla extract
- ¼ cup light brown sugar
For the crumble topping with oats:
- 1 cup light brown sugar
- ¾ cup old fashioned oats gluten-free or the regular one
- ¾ cup all-purpose flour gluten-free or the same measurement for regular flour
- 1 teaspoon ground cinnamon
- 8 tablespoon unsalted butter cold and diced (To make it dairy-free, use the same measurement of coconut oil or dairy-free butter)
- Pinch salt optional
- 1 teaspoon vanilla extract optional
Preheat oven to 350° F (180° C). Grease a large cast-iron skillet or baking dish and reserve.
Prepare the apple filling: In a large bowl, add sliced apples, granulated sugar, 1 ¾ teaspoon of the cinnamon, nutmeg, and lemon juice. Toss well to combine and set aside.
In a medium bowl, whisk together 4 tablespoon melted butter, ¼ cup of flour, water, 1 teaspoon vanilla extract, and ¼ cup brown sugar until homogeneous and smooth. Mix mixture with the apples and transfer to the prepared baking dish.
Prepare the topping mixture: In a separate mixing bowl, mix with your hands 1 cup brown sugar, oats, ¾ cup flour, 1 teaspoon cinnamon, a pinch of salt, 1 teaspoon vanilla, and ½ cup diced cold butter until the mixture resembles pea-sized crumbs. Alternatively, you can use a pastry cutter.
Evenly spread topping over apples and bake for 40-50 minutes, until golden brown and bubbly.
Serve warm with a scoop of vanilla ice cream and a drizzle of caramel or warm dulce de leche. Enjoy!
Storage
Store apple crisp tightly covered (or in an airtight container) at room temperature for up to 2 days or in the fridge for up to 5 days.
