Equipment

  • 1 pan
  • 1 whisk

Ingredients

  • 4 tablespoons unsalted butter – use the same amount of dairy-free butter for a dairy-free gravy
  • 4 tablespoons gluten-free all-purpose flour or the same amount of regular flour if you’re not on a gluten-free diet
  • 2 cups of cold broth or strained turkey drippings – chicken, turkey, veggie, or beef broth all work. I usually use chicken bouillon dissolved in water
  • 1 teaspoon Worcestershire sauce – optional
  • salt and pepper, to taste – Add a pinch of garlic powder, onion powder, cayenne, or paprika for a richer gravy if you like.

Instructions

  • Make the roux: Melt the butter in a medium saucepan over medium heat. Add the gluten-free flour and whisk until a thick paste forms. Cook for about 2 minutes for a blond roux or 3 to 3 ½ minutes for a brown roux. Choose the longer time for a darker gravy with deeper flavor.
  • Add the liquid: Pour in the cold broth or prepared turkey pan juices a little at a time. Whisk well after each addition before adding more. Continue until all the liquid is incorporated and the gravy is smooth.
  • Thicken and season: Cook over medium heat for about 5 minutes, stirring as needed. Stir in the Worcestershire sauce, if using. Taste the gravy, then season with salt and black pepper as needed.
  • Note: To check the consistency, dip a spoon into the gravy and turn it over. The gravy should leave a smooth coating on the back of the spoon.
  • Serve: Remove the saucepan from the heat and serve the gravy warm.

Recipe Notes

Storage and Reheating

Refrigerator: Store cooled gravy in an airtight container in the refrigerator for up to 4 days.
Reheating: Reheat the gravy gently on the stovetop over medium-low heat, whisking often until heated through. If it’s too thick, whisk in a small amount of broth. You can also microwave it at a lower power, stirring between intervals to prevent splattering.
Make ahead: Prepare the gravy up to 4 days in advance and refrigerate it in an airtight container. Reheat shortly before serving.
