Air Fryer Potato Wedges are super crispy on the outside and tender on the inside, making the perfect easy side dish for this air fryer chicken thighs or an appetizer for dipping in ketchup or your favorite sauce.

Air Fryer Potato Wedges

This air fryer potato wedges recipe has fewer calories than if they were deep-fried in oil.

Why? Because they require less oil to cook.

Also, they are crispier than roasted potato wedges and take less time to cook in the air fryer than in the oven.

This said you will have calories and time cooking them in the air fryer.

All that you need to do is to scrub the potatoes, cut them into wedges, soak them in cold water for about 20 minutes, pat them dry, toss in oil and seasonings, and cook in the air fryer.

The cook time depends on the air fryer temperature and the thickness of the wedges.

No special skills are required!

Ingredients and Substitutions

To make these air fryer potatoes, you will need a few simple ingredients as follows:

  • Russet potatoes -- do NOT remove the skin. It will be extra crispy by cooking it in the air fryer. But make sure to wash the potatoes and pat them dry well before cooking.
  • Olive oil – or extra virgin olive oil. Avocado oil is another good option!
  • Seasonings -- I used simple seasonings like garlic powder, Italian seasoning, salt, and ground black pepper. But you can vary any or replace them with Cajun seasonings, Greek seasonings, Ranch, keto taco seasoning, or others of your liking.
  • Parmesan cheese – preferably freshly grated for extra flavor and saltiness. Skip it if you are vegan!
  • Parsley – fresh and chopped for garnish or another herb of your choice.

 How to make potato wedges in the air fryer

  1. Preheat the air fryer to 390°F (199° C).
  2. Scrub potatoes and cut into wedges about ½ -inch thick. Depending on the size of the potatoes, they will yield about 8-12 wedges each. SEE PIC. 1
  3. Then, soak the potato wedges in cold water for 20-30 minutes. SEE PIC. 2 Drain and pat them dry with paper towels. SEE PIC. 3 They must be dry; otherwise, they will steam instead of air frying and will get soggy instead of crispy!
  4. Toss the wedges with olive oil, garlic powder, Italian seasoning, salt, pepper, and Parmesan until well coated in a large mixing bowl. SEE PIC. 4
  5. Place potato wedges in the air fryer basket and cook for 15 minutes. SEE PIC. 5 It is key to NOT overcrowd the air fryer in order for them to cook evenly. If needed, cook in smaller batches, always in a single layer.
  6. Toss and cook for additional 10- 12 minutes, tossing every 5 minutes or so until crispy.
  7. Serve them with chopped fresh parsley on top and a small bowl of ketchup on the side (or your favorite sauce). SEE PIC. 6

Tips and Tricks

  • Scrub the skin in order to remove excess dirt.
  • Try to cut the potato wedges evenly, about ½-inch thick (neither too thin nor too thick).
  • Soak the wedges in cold water. This will remove starches from the exterior of the potatoes.
  • Pat dry the potatoes very well before adding oil; otherwise. they will steam instead of "frying".
  • Do not overcrowd the air fryer! Cook in smaller batches in a single layer. Toss them once and a while in order to cook them evenly.
  • Before serving, heat all batches in the air fryer for about 5 minutes. They make a great side dish or appetizer and pair well with a bunch of dishes.

Secrets for Extra Crispy Air Fried Potato Wedges

There are 3 secrets for extra crispy potato wedges:

  1. Soak them in cold water for 20-30 minutes. For this, put them in a large bowl covered in cold water and 2 cups of ice cubes. This step will remove most of the starches from the exterior of the potatoes.
  2. Pat them dry very well to remove moisture before tossing them in oil and air frying them.
  3. Cook them in the air fryer in a single layer; otherwise, they won’t crisp up properly and evenly.

How do you cut potatoes into wedges?

  1. Slice each potato in half lengthwise using a sharp Chef’s knife.
  2. Place the cut side down onto the cutting board and slice it in half again (this time crosswise) to make quarters.
  3. Place each potato quarter cut side down, then slice down the center of the quarter to create wedges.
  4. The number of wedges depends on the size of the potato but the thick end should be about a ½-inch thick. Make sure to cut the wedges evenly.

NOTE: Of course, if you are making Air Fryer French fries, the type of cut will be different!

Which potato is best for frying or air frying?

Starchy potatoes like Russet potatoes work best for frying or air frying.

Why?

Because russet potatoes are high in starch and low in moisture, holding their shape well.

But before air frying them, make sure to soak them in cold water for 20-30 minutes so they will get extra crispy!

The thing is they cook faster and crisp up better than other types of potatoes.

If you can, buy organic Russet potatoes because they are on the list of produces high in pesticide residue.

If you don’t find Russet potatoes, Yukon gold potatoes would be the best second choice because they are all-purpose (medium starch content).

But if you decide to make our homemade air fryer potato wedges with waxy potatoes (low starch content and more moisture) such as red potatoes be aware they won’t crisp up well because they contain too much water and tend to hollow out.

They will take longer to cook.

Storage

Store our crispy air fryer potato wedges is in an airtight container in the fridge. They will stay fresh for 2-3 days.

Reheat them in a preheated Air Fryer at 300 degrees F for about 5-8 minutes or until hot. Do not use the microwave; otherwise, they will become soft and soggy!
