    Mussel, Chorizo, and White Bean Stew

    Howdy! How is your day going? I know that so many of us, myself included, live a fast-paced routine-- a race against the clock.... However, I find it refreshing to stop sometimes, let myself catch a breath, and prepare something to make myself happy. That is why today I am going back to the basics. Huh? By "the basics" I mean slow cooking: a dish that takes time to prepare, but produces full-flavored results, bringing out all the savory goodness of the ingredients in our autumnal Mussel, Chorizo, and White Bean Stew!!! It's a party in a bowl...

    Mussel, Chorizo, and White Bean Stew

    OK, happy? I hope you are, because this is simply one of the best stews you will ever have. This stew is a labor of love, but the flavors are worth every second of the time spent preparing it. Yes, perfection takes time and care!!! This reminds me of the Fiji Water filtration process. Just as artesian FIJI Water trickles down through the layers of volcanic rock over time, gathering minerals and electrolytes along the way that create FIJI’s soft smooth taste, likewise our  white bean stew simmers slowly over time to bring out the most amazing flavors and scents from its ingredients.

    The inspiration behind our white bean stew was two dishes from my home country: Brazilian Dobradinha (a white bean stew somewhat similar to the French Cassoulet) and an added touch (mussels) from Leão Veloso Soup, which is basically a seafood soup. Since we are in autumn, my favorite season, I added some of my favorite seasonal vegetables: kale and butternut squash.

    The result? An elegant yet comforting white bean stew that combines different textures and contrasting flavors from its ingredients, making the most of the slow-cooking process. Man, oh man... just thinking of the taste puts a big smile on my face.
