Fiesta Queso Burger Tostadas & Sweepstakes

Fiesta Queso Burger Tostadas that are easy to make with yellow corn tostadas, nacho sauce, ground beef, avocados, and pico de gallo.  This gluten-free dish makes the perfect pick-me-up to celebrate Fiesta San Antonio and casual entertaining.

Have you ever attended Fiesta in San Antonio, Texas?  Well, whether you have or not, these Fiesta Queso Burger Tostadas are a real fiesta for your mouth!

They are full of flavor, eye-popping, and quick to prepare yet gluten-free, making them the perfect bite to celebrate this event or for casual entertaining.

As you may already know, I live in San Antonio, Texas.

Every April the city holds a huge, very important festival called Fiesta,  which has been celebrated ever since the late 19th century.

The festival honors the memory of the battles of the Alamo and San Jacinto.

Fiesta is known for its parades with extravagantly decorated floats, music, yummy street food, marching bands, colorful decorations, and cascarones (colorful eggshells filled with confetti), among other things.

I’m not kidding!  It’s an 11-day citywide party to thrill the eyes, spirit, and palate!

Whether you can visit my city to enjoy Fiesta or not, have a little taste of it by trying our Queso Burger Tostadas.

How to Prepare our Queso Burger Tostadas

To prepare them, all we need to do is cook onion and garlic in oil for about 4 minutes over medium heat.

Next, cook seasoned lean ground beef over medium heat for 3 minutes, stir in tomato paste and let cook for an additional 3 minutes.

When meat is cooked, squeeze on the juice of a lime.

To arrange the tostadas, place yellow corn tostadas on a plate, spread warm Rico’s Gourmet Nacho Cheese Sauce on top, spoon on cooked ground beef, pico de gallo, chopped red cabbage, and sliced avocados.

Serve with your favorite drink and enjoy!

This is the type of recipe that doesn’t require any special skills and can be prepared in less than 30 minutes.

Instructions
  1. Heat a large skillet over medium heat, add oil and cook onion for about 3 minutes, stirring occasionally.
  2. Then, add garlic and let cook for about 1 minute, stirring every now and then. Do not let brown!
  3. Season ground beef with salt and pepper and cook for for 3 minutes.
  4. Add tomato paste and let cook additional 3-4 minutes, stirring occasionally. Stir in lime juice!
  5. To arrange the dish, place corn tostadas on a plate, and spread 2 Tablespoon of warm Rico's Gourmet Nacho Cheese Sauce on top of each of the 4 tostadas.
  6. Next, spoon about 1/4-1/3 cup cooked ground beef on top of each tostada.
  7. Add about 2 tablespoons of pico de gallo and 1/4 cup chopped red cabbage on top, as well as a few slices of avocado and chopped cilantro. Serve immediately!

If desired, additionally serve with sour cream or lime wedges, and your favorite drink.

Game On Shrimp Skillet Nachos that are easy to make with tortilla chips, nacho sauce, shrimp, avocados, and salsa.  This ONE-SKILLET dish makes the perfect pick-me-up for games or casual entertaining.

Do you love watching sports, like March Madness? How about Major League Baseball? No matter what is your answer is, these Shrimp Nachos are game on!

They are rich, satisfying, and quick to prepare, making the perfect treat for games and casual entertaining, too.

How to Prepare our Shrimp Skillet Nachos

To prepare them, all we need to do is season shrimp with a store-bought taco seasoning mix. Heat a medium ovenproof skillet over medium heat, add oil, and cook shrimp for about 4 minutes.

Then, squeeze on lime juice and place on a plate or in a bowl.

Layer a thick layer of chips, both purple and yellow, in the same skillet used to cook the shrimp. Drizzle the nacho cheese over the chips, spoon on half of the cooked shrimp,  and scatter on the shredded cheese.  Repeat layering once more.

Next, bake at 350 degrees F for about 5-10 minutes, or until cheese is melted.  Remove from the oven, top nachos with avocado, tomatoes, red onion, Serrano or jalapeno peppers,  chopped cilantro, and a squeeze of lime. Serve warm with sour cream and/or lime wedges.

Game On Shrimp Skillet Nachos that are easy to make with tortilla chips, nacho sauce, shrimp, cheese, fresh toppings, and  herbs.  This ONE-SKILLET dish makes the perfect pick-me-up for games or casual entertaining.
Instructions
  1. Preheat oven to 350 F.
  2. Season shrimp with the taco seasoning mix in a medium bowl.
  3. Then, heat a medium ovenproof skillet over medium heat, add oil, and cook shrimp for about 2 minutes on one side and turn to cook another 2 minutes. . S
  4. Squeeze on half of a lime and place on a plate or in a bowl.

They are easy to prepare, yet beyond- scrumptious, able to please the most demanding crowd. So yes, our Nacho Pizza Bombs make the prefect treat for games and casual entertaining. Cool, right? 😉

How to Make Nacho Pizza Bombs

To make them, all we need to do is to roll out refrigerated store-bought pizza crust, cut with a cookie cutter, and fill with nacho sauce, a cube of cheddar, a piece of bacon, and a slice of jalapeno.

Brush around the edge of the dough with water and bring the edges of the round towards the center, lightly pleating to form a tight enclosure or pocket.

Next, make a hole in the center of the dough to create a vent, place them onto a lined baking sheet, brush with a mixture of oil, herbs, and seasonings.

Bake at 400 F for about 15-18 minutes. Easy peasy!

The best part is serving them piping hot along with your favorite beer, soda, or other drink of your choice.

Instructions
  1. Place a pizza stone on the center rack of the oven (NOTE: this is needed in order to bake pizza bombs evenly).
  2. Preheat oven to 400 degrees F and then line a baking sheet with parchment paper. Set aside.
  3. Roll the refrigerated pizza crust on a flat surface. Using a 3.75-inch round cookie cutter, cut about 7-8 discs from each pizza crust.
  4. You will end up with about 14-16 discs.
  5. Fill the center of each with 1 teaspoon nacho sauce, top with 1 cube of cheddar, a few pieces of chopped bacon, chopped jalapeno, and a sprinkle of chopped cilantro/parsley.
  6. Then, lightly brush around the outer rim of the discs with water.
  7. Bring the moistened edges of the discs towards the center, lightly pleating to form a tight enclosure, and pinch to seal.
  8. Insert a long wood skewer dipped in flour through the center of the roof layer of the pizza bomb in order to make a hole for steam to vent.
  9. Place on the lined baking sheet, spacing them about 2 inches apart. In a small bowl, mix oil, pepper flakes, garlic, and a pinch of salt and pepper each.
  10. Heat in the microwave for about 40-60 seconds. Brush the Nacho Pizza Bombs with the heated mixture.
  11. Place baking sheet on top of the pizza stone and bake for about 15-18 minutes or until cooked and lightly golden brown.
  12. Remove from the oven and brush them again with the oil mixture.
  13. Enjoy with your favorite drink!

If desired, use the remaining nacho sauce as a dip for the pizza bombs.

Champion Mojito Shrimp Street Tacos

Quick and easy Mojito Shrimp Street Tacos filled with mojito-seasoned shrimp, salad mix, crumbled cheese, and a mango avocado salsa. A true GF champion for the palate and eyes!

The Super Bowl will be held this Sunday, February the 4th.  Amid all the excitement,  it is great to have something scrumptious and quick to prepare that can really thrill a crowd.

This year, we will be celebrating this event with these quick and easy, gluten-free Mojito Shrimp Street Tacos — a true champion for the palate and eyes!

As you probably know, mojitos are traditional Cuban summer cocktail drinks made with fresh lime juice, mint, sugar, club soda, white rum, and ice.

But this time, you are combining the main ingredients (lime juice, white rum, and mint) into a marinade to flavor shrimp.

That’s right! 🙂 The very shrimp that will make our street tacos sizzle with a bold, super delish flavor.

But that’s not all!

Besides the shrimp flavored with a mojito mixture and cooked to perfection, these gluten-free small white corn tacos are bedecked with a small bed of half and half mix (baby spinach, baby lettuce blend, baby greens, radicchio, and red kale), plus crumbled cheese and a mango avocado salsa.

The mango avocado salsa is a flavorful and sensuous attraction all on its own– mango, avocado, red onion, cilantro/parsley, jalapeno, lemon juice, and salt make this salsa the perfect element to heap onto the shrimp.

Both have kind of a Caribbean vibe! 😉  A kaleidoscope of colors and flavors.

Definitely something to bring the heat to the game and fill your belly with joy.  It just screams FIESTA!

Instructions
  1. In a medium bowl, combine the mango, avocado, red onion, jalapeno, lemon juice, salt, and cilantro/parsley.
  2. Cover and refrigerate.
  3. Meanwhile, prepare the mojito shrimp. Season the shrimp with salt, pepper, cumin, and chili powder, mixing well. Add the mint, remove from heat, and squeeze the lime juice all over the shrimp. Toss the cilantro/parsley and arrange the tacos.
  4. Then, heat a large no stick skillet over medium-high heat and add the oil and the seasoned shrimp.
  5. Cook shrimp for about 3 minutes.
  6. Add the rum and let cook until slightly evaporated.
  7. Turn it over, add the garlic, and cook for about 1 minute, stirring occasionally. Do not let brown!
  8. To arrange the mojito shrimp street tacos, place double tortillas (one on top of the other) on a flat surface.
  9. Fill tortilla with a bit of the leaf mix, spoon a bit of the mango avocado salsa on top, then the cooked shrimp, crumbled cheese, and a drizzle of sour cream.
  10. Repeat the process so that you end up with 8 street tacos. Enjoy!

The double tortilla helps to prevent breaking, and spilling of the filling.

Quick and Easy Avocado Cranberry Hummus Dip

Avocado Cranberry Hummus Dip is a no cooking, quick and easy appetizer made with a few simple ingredients, and served with olive breadsticks.  It’s perfect for the Holidays!

The holiday season is on!  Yay!!! And along with it comes food, of course… and the best eats are handy and tasty, right?! They don’t have to be heavy in order to be delicious. This quick and easy Avocado Cranberry Hummus Dip will blow your mind — it’s festive, requires no cooking, and is a real crowd-pleaser. Excited?

Now, please raise your hand if you are crazy for hummus.  Both of mine are raised and waving!!! Yep, yep!  How about avocado and dried cranberries?  Yes… my mouth is watering!

Our hummus follows the same concept as the classic gluten-free Levantine dip or spread prepared with garbanzo beans.  It is made with tahini (sesame seed) paste, lemon juice, seasonings, garlic, and olive oil. The addition of avocado is the twist!  And that’s not all. Our appetizer is topped with dried cranberries, which gives the dip a Christmasy touch, while adding a sweet-sour flavor that contrasts so well with the savory taste of the hummus.

It is served with Italian Mulino Bianco breadsticks — available in two delicious and savory flavors,  Sfilati Tomato and Sfilati Olives. We served our hummus with the latter!  These breadsticks add a wonderful crunch that contrasts with the creaminess of the dip.

Since 1877,  Mulino Bianco has been perfecting its recipe for each product, always maintaining the same standards of high quality for all of them. Because as you may know, when it comes to food, Italians are particularly demanding about products, ingredients, and flavors– no matter whether it is dinner, a simple snack or an appetizer. Every meal is equally  important!

Another bit of good news is that we don’t have to travel to Italy to find these breadsticks. They are conveniently available at an HEB near you, as well as all of the other ingredients used in our Avocado Cranberry Hummus Dip.

To prepare our dip, all we have to do is blend canned chickpeas or garbanzo beans, avocado, tahini paste (optional), garlic, salt, ground pepper and cumin, lemon juice, olive oil, and parsley in a blender until creamy and smooth.

Then, place mixture into a serving bowl and serve with the Mulino Bianco Sfilati Olive breasticks. Voila! Could any appetizer be easier than that?

Instructions
  1. Place all ingredients (except cranberries and breadsticks) into a blender, including the reserved liquid from the canned chickpeas. Blend all until creamy and smooth. Spoon hummus into a serving bowl. Drizzle a bit of olive oil on top. Then, garnish with dried cranberries on the side and parsley leaves. Serve Avocado Cranberry Hummus with the breadsticks and enjoy!

Oven Baked Feta — Greek Style will delight the most demanding palates without causing you a hassle in the kitchen. Now that’s our type of appetizer! 😉 And you know what? It is brought to you by my favorite Greek friends, Mirella and Panos — true experts in Greek cuisine.

They are a Greek couple, living in the gorgeous city of Athens, and co-authors of the delicious food blog, Little Cooking Tips.  On their blog they share stories of their life in Greece, a wealth of Greek/Mediterranean recipes, cooking video selections, some product reviews, and stunning images of Greece. It is a must-read blog!

Folks, let me tell you, these Greeks can cook — for real!!!

“We are Mirella and Panos, blogging at our little corner of the Internet called Little Cooking Tips. Our recipes are mostly Greek and Mediterranean, cooked with real food in our small home kitchen. We felt so honored when Denise, from Easy and Delish asked us to be part of a guest post series on her blog. You see, we have been following her for quite a few years now, from the early days of her previous blog From Brazil to You, where she introduced us to her awesome, authentic and delicious Brazilian recipes! Denise has been an inspiration to us throughout the years and taught us so many things about cooking. For that, all her beautiful posts and her constant love and support, we’d like to take this opportunity to say a huge THANK YOU to her, from the bottom of our hearts!

Denise’s theme in this guest post series was easy weeknight meals or quick desserts. Most Greek foods often take a little time to prepare, so we considered some of the simpler recipes we could use for this post, and after discussing this with Denise, we both agreed on easy and yummy appetizer, which can also be served as a light meal, along with a salad and/or some crusty bread. This dish is the Oven Baked Feta! Some people also call this dish Feta saganaki, even though Cheese saganaki is mostly a fried slice of cheese. You can find oven baked feta at almost every tavern in tourist locations throughout the country, especially in the summer. It’s one of the most popular dishes, and it’s usually one of the dishes people order to accompany grilled meats and tempura-style fried veggies.

The ingredients are very easy to find, very simple and the result is really delicious. Since the ingredients are only a few though, we suggest you use the best quality you can purchase. For instance, authentic sheep’s milk feta is highly recommended as well as organic tomatoes and peppers.

To prepare the dish, you simply make a small “tray” from foil, add feta, onion, tomatoes, pepper, thyme, oregano and EVOO and broil it for a few minutes. The texture of the feta completely changes to slightly crunchy on the outside and soft and yummy on the inside. The veggies and the oregano add a lot of flavor and texture as well. With the quantity described in this recipe, you can serve 2. You can easily, however, make a few more trays of foil with the same combo and serve A LOT more people.

This is super convenient if you’re having people over, for a BBQ for instance. While the meat is being grilled outside, you can prep a cookie sheet/baking dish with as many as 6 of these small foil trays and broil them at the same time.”

Instructions
  1. Preheat the oven broiler (if it has a temperature setting as well, set to 220C/430F).
  2. Cut a piece of foil, about four times the area of the feta slice and fold in half (pic.1). Add the feta slice, fold and lift the 4 sides of the foil, to create a shallow baking “tray” (pic. 2).

  3. Add the onion slices (pic. 3). Add the peppers and the tomatoes (pic. 4).

  6. Add the parsley (pic. 9). Place the tray in a baking dish or cookie sheet (pic 10).

  7. Bake at the top oven rack, right under the broiler, for 8-10 minutes. Serve immediately with fresh crusty bread and/or salad and/or grilled meats or fish and/or fried veggies (like zucchini or eggplant slices). Kali oreksi!

Tips: 1. You can make countless variations of the dish, adding your favorite herbs or spices . For instance, people also like to bake feta with fresh dill or fennel fronds or paprika. 2. You can easily adapt the quantity of onion, pepper or tomato according to your liking.

Pickled Beet Goat Cheese Tartlets

These Pickled Beet Goat Cheese Tartlets are a quick and gorgeous appetizer, perfect for the Holidays as well as for any other winter celebration.

The holidays are almost here… and along with them a festive meal with family and friends. Appetizers are a must! Especially the kind that can be prepared in almost no time, leaving us free to take care of the main and side dishes.  This time we whipped up some easy and delish Pickled Beet Goat Cheese Tartlets. They are a feast for the eyes, don’t you think?!

Yet they are super simple to make. These are basically made from store-bought puff pastry, a mixture of goat and cream cheeses, jarred pickled beets,  golden tomatoes, toasted pine nuts, and tarragon.

All one has to do is to cut the puff pastry into rounds using a cookie cutter, place them into a muffin tin, and bake for about 10-15 minutes or until lightly golden brown. Let cool and fill with a mixture prepared with cream cheese, goat cheese, seasonings, heavy cream, and chopped tarragon.

Then, garnish with jarred pickled beets, golden tomatoes, herbs, toasted pine nuts and boiled eggs if desired. You see… easy peasy!

They feature contrasting textures (flaky from the puff pastry, creamy from the cheese mixture, and crunchy from the nuts)… as well as contrasting flavors. You will be delighted by the sweet and sour from the pickled beets, nutty pine nuts, peppery flavor from the tarragon, and salty from the cream cheese mixture.  I am telling you, they are one unforgettable starter!

They make the perfect pair for Cavit Pinot Grigio, a white wine from northern Italy.  Just like other Cavit Trentino wines, the Pinot Grigio featured today is crafted with quality, honoring its region. And an added bonus is that it is affordable. That’s right! It costs about $8 a bottle.

With a balanced character, bright straw gold color, appealing aroma and citrus flavors, this Pinot Grigio pairs well with many of the ingredients present in our Pickled Beet Goat Cheese Tartlets, especially the tarragon, pine nuts, and goat cheese.

Enjoy it well chilled, together with our gorgeous and delicious tartlets… and experience the magic of the giving season!

Instructions
  1. Preheat oven to 375 degrees F.
  2. On a lightly floured surface, cut puff pastry into rounds using a 3 1/4" cookie cutter. Place each round into a regular-size 12-muffin tin. Bake for about 10-15 minutes or until lightly golden. Let cool! They will look like bread rolls. Once cooled, twist off the top of each carefully to make them into cupped tart shells. You can invert the twisted off tops and use them as additional tart shells if desired.
  3. Meanwhile, place cream cheese, goat cheese, heavy cream, salt, pepper, sugar, and tarragon into the bowl of a stand mixer with a paddle attachment. Beat all together until obtaining a creamy, homogeneous mixture. Spoon into the tartlets and smooth with the back of a spoon.
  4. Place beets onto a cutting board and cut each slice in half. Garnish Pickled Goat Cheese Tartlets as seen in the pictures or as desired (use the pickled beets, golden tomatoes, quartered boiled eggs, toasted pine nuts, and tarragon leaves or baby arugula). Enjoy!
