In need of a guiltless treat right in the morning? Well, we have the perfect one for you! This keto peanut butter mug cake can be prepared in a jiffy…  yet is quite delish and satisfying. The cake itself is moist and comes with a swirl of melted dark chocolate and a bunch of chocolate chips. It is a treat for both the eyes and the belly!

See why you have so many reasons to make this healthy cake in a mug.

The Best Keto Peanut Butter Mug Cake Ever

When I say this recipe for mug cake is THE ‘IT ’ recipe, I mean it! Come see why:

    • It’s moist, nutty, buttery, and rich!
    • Made with only 6 ingredients: creamy peanut butter, almond flour, unsalted butter, sugar substitute, egg, and dark chocolate chips. In other words… it’s one of those budget-friendly and easy pantry recipes.
    • Quick: it’s cooked in the microwave for 1 or 2 minutes
    • Versatile: you can make it for breakfast or as a dessert!
    • This mug cake is cheap and healthy!
    • Mess-free: you will wind up with just  one or 2 mugs to clean!
    • It’s naturally gluten-free, keto, and low carb. Moreover, it can be dairy-free if made with dairy-free butter.
    • Ideal for college students who live in a dorm and also for busy people rushing in the morning to grab a bite before going to work or school.
    • Also, it’s perfect for those who want to quickly satisfy their cravings but have diabetes, PCOS, or are on a keto diet!

    How awesome, right?

    What's a mug cake?

A mug cake is literally a cake prepared and cooked in a mug! There are different recipes and flavors but most of them cook faster in the microwave for about 1 to 2 minutes, depending on the potency of your microwave. It’s quite simple to prepare too: all you need to do is to mix ingredients in a mug and microwave, making it mess-free.

microwave keto breakfast in a bowl being spooned

Why is this recipe for peanut butter mug cake made with eggs?

Mug cakes made with eggs have a spongy texture and are more cakey than fudgy. They are also puffy because there is a protein structure (egg) to help them rise, and the almond flour will hold the shape better.

But because they are also more on the dry side, we added melted chocolate to the batter to make this one a bit fudgy too.

This will make the top center soft and creamy while from the middle to bottom it is more solid.

If you don’t have a microwave, no worries! This chocolate peanut butter mug cake will bake well in the oven because it will rise due to one of its ingredients – egg. It’s one of many 5-ingredient or less recipes that you won’t regret trying!

Can it be baked in the oven?

Yes, it can! To do that, preheat the oven to 350 degreesF/180 degrees C and bake our peanut butter cake in a mug for 10-15 minutes. It's key not to omit adding the almond flour to the peanut butter mixture in order to give this healthy mug cake a real cake structure. But it will cook much faster in the microwave-- about 1-2 minutes!

How to make peanut butter mug cake

4 image collage showing how to make peanut butter mug cake

    1. Get all ingredients together. SEE PIC. 1 In a 12-ounce mug, melt 1 tablespoon of unsalted butter in the microwave, about 20-30 seconds, or until melted. Then, stir in the peanut butter, almond flour, egg, and sugar substitute until the mixture is combined. SEE PIC. 2
    2. In a small bowl, melt ½ tablespoon of unsalted butter with 2 tablespoon of chocolate chips in the microwave, about 45-60 seconds until chocolate is melted. Stir very well until chocolate is smooth.
    3. Pour melted chocolate on the top center of the peanut butter mixture and draw a few swirls with a chopstick or the tip of a paring knife. SEE PIC. 3 Add about 1 tablespoon of chocolate chips on top and microwave for about 60 to 80 seconds or until cooked and well set. SEE PIC. 4
    4. Let cool for at least 2 minutes before enjoying warm. If you want, serve with a scoop of vanilla ice cream on top.

    Substitutions

    • Peanut butter: for any other nut butter, or Nutella
    • Sweetener: sugar, brown sugar, maple syrup, xylitol, etc
    • Egg: ¼ cup mashed banana = ⅓ cup applesauce
    • Almond flour -- use coconut flour instead, about ⅓ of the amount for almond flour (or 1 tsp)

    Cooking/baking tips

    • To avoid spill, be sure to use a mug that is large enough, as the batter will rise a lot in the microwave. I suggest using at least a 10 to 12-ounce mug for this recipe because the batter will rise quite high during the cooking process.
    • Keep a close eye on the mug cake while it is in the microwave to avoid spillage.
    • Cook it only until the center is just set. The final cooking time will depend on 1) The potency of your microwave. In a 1200 Watts microwave, it takes around 1 minute. 2) If your mug is wider than taller. Wider mugs will have the cake batter spread out and so, it will cook faster than if in a deep or tall mug. In addition, it will take more time to bake (10-15 minutes) than  to cook it in the microwave (1-2 minutes). Stick to standard shaped mugs. Why? Because mugs that are too tall/skinny or have an odd shape may cause the cake to not cook evenly. I find wide mugs cook this type of cake better and faster! Do not overcook the cake. A few seconds can make a big difference. But if you find your cake not fully cooked, cook it a little longer at 10-15 second intervals.

    Storage

Eat this peanut butter mug cake warm to enjoy the melted chocolate goodness. But you can cover the mug once the cake cools and store in the fridge for up to 24 hours. Eat cold, or heat covered in the microwave for about 20-30 seconds, or until warm.
