Keto Starbucks Egg Bites Recipe (2 Ways)

This egg bites recipe is a Starbucks copycat.  Unlike the store-branded breakfast egg bites that cost about $4.45 for two, ours make a  budget-friendly keto  breakfast that only costs  $1.00 for two. They are not only healthy but also easy and delish… and one of those easy freezer meals that you can make ahead! Find out how to make 2 different flavors in the oven and in the Instant Pot sous vide.

Looking for a healthy breakfast that doesn’t break the bank?  These egg bites fit the bill! 

Besides, they are portable, so you can make them ahead, reheat, and take them to work or school on busy days. 

Grab yourself a cup of coffee and enjoy a feast without guilt! 

Reasons to Make these Starbucks Copycat Egg Bites

  • Easy to make: Just blend most of the ingredients in the blender and either bake in the oven or pour the mixture into a mold and cook in the pressure cooker or Instant Pot using the sous vide function.
  • Budget-friendly: Starbucks sells two for $4.45. Ours cost only $ 1.00 for two. That’s a savings of $3.45!
  • Mess-free: All you need is a blender and either a muffin tin for baking them in the oven or a mold for preparing them in the Instant Pot. That means you won’t have very much to wash later on.
  • Healthy: They are low carb, keto, and gluten-free– plus, rich in protein and contain vitamins too. Moreover, these are a good dish for incorporating veggies into your diet at breakfast time as well.
  • Freezer-friendly: You can keep leftovers in an airtight container in the fridge for up to 3 days, or freeze them for up to 2-3 months.
  • Versatile: You can customize your own flavors easily. There are endless combinations such as bacon and gruyere, egg whites and roasted red pepper, cheddar and broccoli, Caprese, and so on. Just use your imagination!
  • Breakfast on the go: Make them and then enjoy them on the way to work or school, along with a cup of coffee. They are quite portable!

Starbucks Sous Vide Egg Bites in the Instant Pot

Starbucks makes their egg bites in a sous vide machine, but most people don’t have one – myself included!

But no worries! If you have a pressure cooker or an Instant Pot, you can easily use sous vide function. You will just need a silicone egg bites mold. #ad This silicone egg bites mold fits a 5, 6, and 8-qt Instant Pot.

Set up your Instant Pot or pressure cooker by pouring 1 cup of water inside the bowl and then put the rack/trivet inside. Next place the silicone mold filled with the egg bites batter on top. Make sure to cover the mold with aluminum foil and lock the lid. Press the STEAM or SOUS VIDE function for 10 minutes. It may take about 5 minutes or so for the pressure to build and the function to start working.

After the 10 minutes are up, let the pressure release naturally for 10 minutes before removing the egg bites.

If you are using this method to cook our egg bites, it will take about 30 minutes from start to end this recipe (5 minutes prep, 5 minutes to build pressure, 10 minutes to cook, and 10 minutes to release natural pressure).

Follow the recipe below and use this Instant Pot sous vide cooking method.

OK! But perhaps you might be asking yourself, what’s sous vide?

Well, sous vide means “under vacuum” in French. This cooking method consists of vacuum-sealing foods and then cooking them immersed in water at a very precise and consistent temperature. One of the benefits of the sous vide technique is it doesn’t require extra fats or oils and the food comes out perfectly cooked.

How to Make Easy Egg Bites in the Oven

I find this baking or oven method much simpler.

  1. Preheat oven to 300 °F (148° C). Grease very well a standard 12-cup muffin tin with cooking spray and reserve.
  2. Meanwhile, blend the whole eggs or only the egg whites with cheese, cream cheese, and seasonings in the blender until frothy. SEE PIC. 1
  3. Pour mixture into the greased muffin tin and place your add-ins such as cooked bacon bites and spinach, or roasted red pepper and basil. SEE PIC. 2
  4. Place muffin tin into a large roasting pan with boiling water coming halfway up. Bake the whole egg mixture for about 30 minutes but the egg white mixture for about 20-25 minutes (SEE PIC. 3). They are ready when egg bites are just set and have a custard-like texture.
  5. Let pan cool on a rack for 3 minutes (SEE PIC. 4) , run a knife around the edges to loosen them, and gently remove the bites. You may use a spoon or invert them over a platter (SEE PIC. 5). Don’t wait much longer than 3 minutes or they may become difficult to remove.
  6. Serve while hot.

Egg and Cheese Ratio

 You can make egg bites either dense or light and airy. But whatever texture you choose, they should be custardy. For  this reason they need to cook gently either in a bain-marie or using the sous vide method. Note: don’t overcook them! 

The texture will depend on the egg to cheese ratio. The more cheese you use, the denser they will become. It is crucial that you use cheeses that can blend and melt well such as the ones mentioned below.  Mozzarella is not one of them by the way: when blended, it becomes gritty. 

Once cooked, our egg bites will puff up in the oven and then will deflate a little once they start to cool down. I use a ratio of ¼ cup of one of the cheeses of choice such as gruyere, swiss, or cheddar, and ¼ cup of cream cheese or cottage cheese for every 5-6 eggs or egg whites.

The ones made with whole eggs will be smooth and custardy and require a little more time to cook in the oven.  In contrast, the egg bites made with egg whites will have a lighter texture and will cook about 5 minutes faster.

In addition, to make 6 egg bites you will need about 5 whole egg or 6 egg whites.

Add-Ins

You can choose your own. But Starbucks uses the following ingredients in their egg bites:

For the Bacon & Gruyère Sous Vide Egg Bites

Whole eggs with cottage cheese, a mixture of aged Gruyere and Monterey Jack cheese are topped with a layer of smoked bacon. These contain about 310 calories per serving and 19 grams of protein.

For the Starbucks Egg White Bites with Roasted Red Pepper

Egg whites with Monterey Jack and cottage cheese, plus spinach and fire-roasted red pepper. Two have 170 calories per serving and 13 grams of protein.

These are not the same as Costco egg bites under the brand Dee Amore which are made with three-cheeses and uncured bacon.

Moreover, Starbucks egg bites are also distinct from the Three Bridges egg bites with 5 different flavors.

Suggested Egg Bites Flavor Combinations 

Bacon & Gruyere

  • 5 whole eggs
  • ½ cup shredded gruyere cheese
  • ¼ cup cream cheese or cottage
  • Seasonings (1/4 tsp salt + a pinch of pepper)
  • 4 leaves baby spinach, thinly sliced + 3 slices cooked bacon, chopped

Egg White & Roasted Red Pepper

  • 6 egg whites (use yolks to make quindim) 
  • ½ cup shredded Monterey Jack or Swiss
  • ¼ cup cream cheese or cottage cheese
  • Seasonings (1/4 tsp salt + a pinch of pepper)
  • 3 tbsp roasted red bell pepper, chopped + 4 leaves fresh basil, thinly sliced

Cheddar & Broccoli

  • 5 whole eggs
  • ½ cup shredded cheddar
  • ¼ cup cream cheese or cottage
  • Seasonings (1/4 tsp salt + a pinch of pepper)
  • ¼ cup cooked broccoli, chopped

Caprese

  • 6 egg whites
  • ½ cup Swiss (mozzarella can make these gritty)
  • ¼ cup cream cheese or cottage cheese
  • Seasonings (1/4 tsp salt + a pinch of pepper)
  • 3 tbsp sun-dried tomatoes, chopped + 4 leaves fresh basil, thinly sliced
  • You may serve drizzled with balsamic if you wish.

Sausage & Mushrooms

  • 5 eggs
  • ½ cup crumbled feta (it already has plenty of salt)
  • ¼ cup cream cheese or cottage
  • Seasonings (a pinch of pepper)
  • ¼ cup cooked crumbled sausage + 3 tbsp cooked mushrooms, chopped

Of course, you can create your own flavor combo!  You can place them in a lunchbox or bento box and carry with you wherever you go.

Make-Ahead and Storage

You can make these egg bites up to 3 days ahead and store in an airtight container in the fridge. Place in a sealable bag, removing as much air as possible, and then freeze for up to 2-3 months.

To reheat, microwave (1200 Watts) for about 10-15 seconds if chilled, or for 30-90 seconds if frozen, depending on the potency of your microwave.

Ingredients

Bacon & Gruyere Egg Bites

  • 5 large eggs at room temperature
  • 1/2 cup shredded gruyere cheese
  • 1/4 cup cream cheese, softened or cottage
  • 1/4 tsp salt plus a pinch of pepper
  • 4 leaves baby spinach thinly sliced
  • 3 bacon strips cooked and chopped

Egg White & Roasted Red Pepper

  • 6 large egg whites
  • 1/2 cup Monterey Jack or Swiss
  • 1/4 cup cream cheese, softened or cottage
  • 1/4 tsp salt plus a pinch of pepper
  • 4 fresh basil leaves thinly sliced
  • 3 tbsp roasted red bell pepper chopped

Instructions

  • OVEN: Preheat oven to 300 °F (148° C). Grease very well a standard 12-cup muffin tin with cooking spray and reserve. Meanwhile, blend whole eggs or only whites with cheese, cream cheese, and seasonings in the blender until frothy.

  • PRESSURE COOKER/INSTANT POT SOUS VIDE: Set up your Instant Pot or pressure cooker by pouring 1 cup of water inside the bowl and then place the rack/trivet. Next, put the silicone mold filled with the egg bites batter on top. Make sure to cover the mold with aluminum foil, lock the lid, and turn the valve.
  • Press the STEAM or SOUS VIDE function for 10 minutes. It may take about 5 minutes or so for the pressure to build up and the function to start working. After the 10 minutes are up, let the pressure release naturally for 10 minutes before removing the egg bites.

The Egg White and Roasted Red Pepper Bites contain about 84 calories, 1 g NET  CARBS, 6 g protein, and 6 g fat.
