    Berry Yogurt Popsicles

    These red, white, and blue Berry Yogurt Popsicles call for Greek yogurt, strawberries, and blueberries, making a healthy, creamy, refreshing, and delicious treat for summer, Memorial Day, or the 4th of July!

    How to Make Berry Yogurt Popsicles

    1. In a food processor or blender, blend strawberries, 2 tablespoons of the sweetener, ¼ cup of water, and ½ teaspoon of lemon juice until pureed. Transfer to a bowl and reserve!
    2. Separately, blend the blueberries with 2 tablespoons of the sweetener,  ¼ cup of water, and ½ teaspoon of lemon juice until pureed. Transfer to a bowl or glass and reserve!
    3. In a medium bowl, stir yogurt with 4 tablespoons of the sweetener (or enough to taste), and set aside.
    4. Place 2 tablespoons of the processed strawberry mixture into each popsicle mold. Then, spoon 2 tablespoons of the yogurt mixture on top, followed by 2 tablespoons of the blueberry mixture. Use a long skewer or butter knife to swirl the fruit purees. Insert popsicle sticks in the center and freeze until firm or completely frozen (8 hours or more).
    5. To remove ice pops from the mold, run warm water around the molds and let sit at room temperature for about 5 minutes. If desired, serve them decorated with star sprinkles to enjoy patriotic popsicles!

    Ingredients and Substitutions

     To make this healthy berry yogurt popsicle recipe, you'll need: 

    • Berries: I used fresh strawberries for the red layer but you can swap for raspberries. As for the blue layer,  blueberries work best here. You may swap the fresh fruits for frozen berries. 
    • Sweetener: Stevia is my first choice to make a low-carb treat. However, you can swap for granulated sugar, honey, maple syrup, or another of your liking. 
    • Lemon juice: It will add a tangy flavor to the berry purees. You may swap for lime juice!
    • Yogurt: I used plain Greek yogurt, but you can replace it with a coconut or vanilla-flavored Greek yogurt, or a thick high-protein, vegan, or keto yogurt. The most important factor is to choose a thick yogurt of your liking! 
    • Star sprinkles: Although optional, it will add a nice touch to this homemade patriotic frozen treat!

    Pro Tips for Making Red, White, and Blue Popsicles

    • Make sure to puree each berry separately and rinse the blender or food processor between each.
    • After sweetening the yogurt, taste the mixture and adjust the sweetener to your liking. It's important to use a thick yogurt which will serve as a barrier between the layers of the 2 berry purees. 
    • To give the effect you see in the pictures, swirl the layered berry mixtures and yogurt using a knife or long wood skewer. But if you prefer to have a defined 3-layer popsicle, avoid swirling!  
    • Let your berry yogurt ice pops freeze well before serving. 
    • Our patriotic popsicles are gluten-free, low-carb, sugar-free, low-carb, and low-fat.
    • They can be dairy-free or vegan if you use maple syrup as the sweetener, and a plant-based yogurt.

    FAQs

    What are the red, white, and blue popsicles called?

    The famous 3-layered red, white, and blue popsicles in the shape of a rocket are called Bomb Pops, Firecracker Pops, and Rocket Pops. 

    How long does it take for yogurt popsicles to freeze?

    It can take from 8 to up to 24 hours for your yogurt ice pops to freeze completely and hold its shape. However, if your molds don't have slots to insert the sticks before freezing them, freeze ice pops for 1½ to 2 hours, then insert the stick in the middle, and continue to freeze them for an additional 6+ hours.

    How many calories are in a yogurt popsicle?

    The calories will depend on the type of yogurt and sweetener you use, the added ingredients, and the size of your popsicle mold. Our healthy berry yogurt ice pops have about 40 calories per popsicle.

    STORAGE: Store these berry yogurt popsicles in their molds in the freezer for up to 4 weeks. To remove popsicles from the mold, run warm water around the molds and let sit at room temperature for about 5 minutes.

      I never did posicles, and I don't know why because I really like it, and can be as healthy as you want, because you can make it with just healthy ingredients.
