    Don't you love versatile dishes?

Well, I do-- especially when they are easy to make with staple ingredients and can be served for multiple occasions,  like this Loaded Mashed Potato Skillet.

Our Loaded Mashed Potato Skillet features mashed potatoes mixed with lots of cheddar cheese and bacon...

... and transforms into a comforting dish that goes well as a breakfast or breakfast-for-dinner casserole -- especially if you bake some eggs along with it.

As if that weren't enough, it can be served as a dip with bruschetta or mini sweet peppers for holidays and sports viewing parties.

In addition, this Loaded Mashed Potato Skillet goes well as a side dish for the holidays or any day of the week.

This is not your run-of-the-mill mashed potatoes—it is rich, creamy, and full of bold flavors!

Ready? OK then, grab a cast iron skillet and come along with me!

HOW TO PREPARE LOADED MASHED POTATO SKILLET

    Preheat oven to 425 F.

Either wash and cook peeled potatoes in a pot filled with cold water for about 15 minutes or until potatoes are soft...

... or, alternatively, use potato mix (which shaves off ⅔ of total preparation time!).

If using potatoes, after they are fully cooked, drain and mash well while they are still hot/warm.

If using potato mix, follow instructions on the package, adding boiling water, salt, butter, and milk.

Mix either mashed potatoes or cooked potato mixture with cream cheese, sour cream, seasonings, garlic powder, cheddar, cooked chopped bacon, and chopped green onions.

Stir well until obtaining a homogeneous mixture.

Spoon into a well greased 8- to 9-inch cast iron skillet. Bake on the middle rack for about 20 minutes.

If serving for breakfast, make 4 wells on top of the potato mixture and break one egg into each well before baking.

Remove from the oven and preheat broiler.

Meanwhile, top baked potato mixture with ⅓ cup cheddar cheese and 1 slice of chopped cooked bacon.

Broil on top rack of the oven (about 5 inches away from broiler/heat) for 1-2 minutes or until cheese is melted.

Serve immediately, accompanied by toast, bruschetta, mini sweet peppers or jalapeno halves, or as a side for meats. Enjoy!

    PIN & ENJOY!
