Our Ginger Molasses Cookies recipe is quick and easy to make, and super yummy. They are also known as chewy ginger crinkle cookies.

These cookies are full of warmth and made with ground ginger, cinnamon, cloves, molasses, and sugar, among other ingredients.

HOW TO MAKE GINGER MOLASSES COOKIES RECIPE

  • Preheat oven to 350° F. Line a baking sheet with parchment paper and reserve. 
  • Then, cream Crisco with sugar in the bowl of an electric mixer at low speed until homogeneous.
  • Next, sift flour into the bowl and add baking soda, salt, and spices. Mix in until combined.
  • Whisk in molasses and the egg until combined. Transfer the dough to a surface lined with plastic wrap and form a log.

  • Wrap well and place in the fridge for 2 hours, or overnight.
  • Using a tablespoon as measurement, roll dough into balls and then in sugar. Place onto the lined sheet, making sure to leave about 2 inches apart bewteen them.

  • Bake for about 11-13 minutes or until set. Transfer baking sheet to a rack and let ginger spice cookies cool. Enjoy! 

COOK'S NOTES FOR CHEWY GINGER CRINKLE COOKIES

  • These chewy ginger crinkle cookies are molasses cookies with ground ginger, cinnamon, and cloves.
  • You can substitute the same amount of all-purpose flour for gluten-free flour.
  • They are both gluten-free and dairy-free. 
  • STORE Ginger Molasses Cookies in a clean airtight container at room temp for up to 3 days. Freeze unbaked dough (without rolling in sugar) as well as baked cookies for 3 months. Thaw in the fridge! 

 

WHAT KIND OF MOLASSES DO YOU USE FOR COOKIES?

You can use regular dark molasses, although the best type is unsulphured molasses –which has the best flavor and is made out of sun-ripened cane that has grown 12-15 months. 
 

CAN I USE BLACKSTRAP INSTEAD OF REGULAR MOLASSES?

In theory you can use blackstrap at the same amount that the recipe calls for molasses. But be aware that you will wind up with a baked good with a quite strong aftertaste.
 
Blackstrap is darker and has a much stronger flavor than regular molasses.

  • ¾ cup solid shortening (Crisco)
  • 2 cup sugar plus extra ½ cup to roll cookies
  • 2 cup gluten-free all-purpose flour sifted (if desired, use a NON GF flour -- same amount)
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • ¼ cup molasses
  • 1 large egg room temp

Instructions

  • Preheat oven to 350° F. Line a baking sheet with parchment paper and reserve.

  • Transfer the dough to a surface lined with plastic wrap and form a log. Wrap and place to rest in the fridge for 2 hours, or overnight. Using a tablespoon as measurement, roll dough into balls and then in sugar.  Place onto the lined sheet, leaving about 2 inches apart between them. 
  • Bake for about 11-13 minutes or until set. Transfer pan to a rack and let Ginger Molasses Cookies cool completely. Enjoy!

    I love this recipe and have baked it many times now, tried and true! I also drizzle them with a powdered sugar icing after cooling. I use bob's red mill gf cup for cup flour. Thank you for a great recipe!
