Before you begin, be sure to remove the steaks from the fridge and let them sit at room temperature for 30 minutes.

Heat a large cast-iron skillet over medium-high heat. Add the oil and then the steaks.

Cook for either 3-4 minutes per side for medium-rare to medium or 5-6 minutes per side for medium to well done. Remove the steaks and place on a plate to rest while you cook the eggs.
