Grilled Peach S’mores Sticks

Grilled Peach S’mores Sticks make a quick and scrumptious dessert or snack, perfect for summer, and a great way to combine fruit with a beloved classic.

Summer has finally arrived. Yay! And along with it, this twist on a beloved American classic: 5-Ingredient Grilled Peach S’mores Sticks, which can be prepared in less than 30 minutes.  They make the perfect backyard BBQ or campfire dessert or snack for the warmer months of the year… and a great way to incorporate fruit and a touch of acidity to balance out the sweetness of S’mores.  A real feast for the eyes and palate!

Yep, yep, yep… they are super, super simple to make. These are basically made with just 5 ingredients: vegetable oil, peaches, chocolate chips, mini marshmallows, and graham cracker crumbs.

All it takes to make these is to slice peaches in half and remove the pit, brush on a bit of oil, grill in either a grill pan or on the grill, stuff the center with a bit of chocolate chips and mini marshmallows, and let them melt a bit. Then, insert a tree stick or popsicle stick in each halved peach, and top with graham cracker crumbs. Voila!

Our Grilled Peach S’mores Sticks are ready to be devoured warm… with all the ooey gooey yumminess of the s’mores. This way you get the best of two worlds: the deliciousness of grilling and all the charm and allure of the campfire. 😉

Instructions
  1. Slice each peach in half. Remove pit and carve out a bit of the center using a spoon or a melon baller. Brush peach half with a bit of oil. Grill on medium (gas grill or grill pan) or on the edges of a charcoal grill (coolest area) until marks appear, about 3-5 minutes.
  2. While peaches are still hot, stuff cavity of each peach with 1/2 Tablespoon of chocolate chips and about 7 mini marshmallows per peach half. Let melt a bit (place peach halves in a platter and cover with foil if necessary). Then insert stick in one of the ends of each peach. Sprinkle a dash of graham cracker crumbs and enjoy!

Berry Coconut Yogurt Popsicles (Patriotic Fruit Popsicles)

This is the week before the 4th of July… and we will be celebrating our Independence Day with these super-refreshing, creamy, and delicious Berry Coconut Yogurt Popsicles. But in light of their red, white, and blue colors, why don’t we simply call them Patriotic Fruit Popsicles to make it easy? 🙂

Our Berry Coconut Yogurt Popsicles are gluten-free and a crowd-pleaser.  They will make your barbecue, picnic, or even the most unpretentious snacktime a happy time.

All you have to do is blend strawberries and blueberries separately with water and sugar, or any other sweetener of your choice. Next, layer these two fruit mixtures with a mix of yogurt and coconut milk, swirl to give the pops a cool effect, and then freeze. You can either  serve them plain…

Instructions
  1. In a food processor or blender, process/blend well the strawberries with 3 tablespoons of sugar and 1/4 cup of water, and reserve. Separately, process/blend well the blueberries with 3 tablespoons of sugar and 1/4 cup of water and reserve. In a small bowl, stir in well the yogurt with the coconut milk and the remaining 3 tablespoons of sugar and set aside.
  2. Place 2 tablespoons of the processed strawberry mixture into each popsicle mold. Then, spoon 2 tablespoons of the yogurt mixture on top, followed by 2 tablespoons of the blueberry mixture. Use a long skewer or butter knife to swirl fruits a bit. Insert popsicle sticks in the center and freeze until completely frozen (8 hours or more).
  3. To remove popsicles from the mold, run warm water around the molds and let sit at room temperature for about 5 minutes. If desired, serve them decorated with star sprinkles, and enjoy these patriotic fruit popsicles!

Quick Chocolate Popcorn with Condensed Milk Drizzle (Pipoca de Chocolate)

The Fourth of July, America’s Independence Day, is just around the corner.  Last year we celebrated with a refreshing, patriotic Chocolate Pudding Ice Cream Pie.   But this year we will be celebrating the date with none other than a fun, Quick Chocolate Popcorn with Condensed Milk Drizzle and M&M’s (Pipoca de Chocolate com Leite Condensado e M&M’s)…

This chocolate popcorn is a great family dessert which virtually no child (or adult) will be able to resist… See the precise equation: Chocolate + popcorn + sweetened condensed milk + colorful M&M’s = a HIT!!!!  It just doesn’t get any better than this, does it?

If you love grilling, these Grilled Chicken Legs wrapped in Bacon (churrasco de frango) accompanied by Grilled Corn on the Cob with Jalapeño-Lime Aioli and Parmesan Cheese will make your day!  If you don’t feel like firing up the grill, try these fall-off-the-bone barbecued Brazilian-Style Pork Ribs which are prepared in the oven and can be enjoyed all year round.

And, of course, this Strawberry Caipirinha or Berry Caipilé with Tangerine Popsicle (drink and dessert in a glass) can cool off any soaring temps.

Instructions
  1. First, microwave the popcorn bags -- one at a time -- following the instructions on the package. Then, open the bags, place popcorn on a large baking sheet, and remove and throw away all unpoppedkernels of corn. Set popped kernels aside to be folded in the chocolate mixture.
  2. Over medium heat, using a medium non-stick pot, combine the sugar, corn syrup, butter, cocoa powder, and salt, stirring until it starts to boil. Let boil for about 1 to 2 minutes without stirring. Mix in baking soda and vanilla, stirring until thoroughly combined. Turn off the heat and let mixture cool for about 30 seconds before folding popcorn in (in order to prevent popcorn from becoming soggy).
  3. Add the popcorn, folding it in the mixture until popcorn is very well coated. Spread chocolate popcorn onto a greased foil-lined sheet pan, separating the popped kernels from one another, and let cool enough to handle. Transfer chocolate popcorn to a container, drizzle sweetened condensed milk on top just immediately prior to serving, and decorate with M&M's. Enjoy!

Pineapple Delight Frozen Trifle (Delícia de Abacaxi)

Hello, my lovelies!!!  I am so excited about these upcoming events: My birthday on the 6th and Brazil’s independence day on the 7th.  For celebrating important dates, nothing better than a “sweep me off my feet” treat, wouldn’t you agree?  No, it is not going to be a cake!  It is better…much better — a Pineapple Delight Frozen Trifle, known in Brazil as Delícia de Abacaxi.  Its name says all!!!

Some women don’t celebrate or even mention their birthday after their 30’s.  Well, not me! I’ll be proudly turning 41.  Life is such a significant event that I believe it should be valued and celebrated every day, especially on one’s special day.  I also believe that every phase of our lives has its pro’s.  I for one have grown a lot as a person over these years and have learned many great life lessons…. There are so many wonderful people who have come into my life — my husband, my precious children, in-laws, and several friends.  I have traveled, I have laughed, and cried as well.  How could I be ashamed of my age?  It would be like erasing part of my life.  I thank God and His precious Son for the life and the many blessings that have been given to me.

I am also proud to celebrate the 191th anniversary of Brazil’s independence from Portugal– a significant date for all Brazilians, no matter where they are on the globe.  I have lived in the US for 11 years so far.  I love this country dearly but I also love my mother country dearly, too.  It gave me roots, access to a rich culture and cuisine, and most of all, a sense of belonging… it gave me identity!!!  Yes, Brazil may be far-from-perfect, but it is my first home.  My family is there as well as most of my memories… Brazil lives within me!

The Brazilian Flag

To celebrate both of these upcoming significant events in my life, I had to share with you something tropical and delightful, something very Brazilian: Pineapple Delight Frozen Trifle or Delícia de Abacaxi.  Although fall is just a couple of weeks away on the calendar, there are many parts of the US where temperatures are still running high.  My second home, Texas, is one of them.  Nothing like a frozen treat to refresh us, isn’t there?  Well, there are two ways that Pineapple Delight Trifle is served in Brazil: 1) chilled  (most often) or 2) frozen.  I love both, but I do prefer the frozen trifle a little more because it is more refreshing, and all of its wonderful flavors are concentrated.  Although frozen, the Pineapple Delight Trifle is still creamy.

  1. To make the pineapple compote: Mix together cubed pineapple, sugar, water, and cinnamon stick in a medium saucepan, and cook over medium-high heat for about 30-35 minutes, stirring occasionally, or until pineapple becomes tender, lightly golden brown, and water nearly evaporates (my compote was prepared on the large stove-top burner. If you are cooking on a smaller burner, it will take about double the time mentioned above to fully cook). Near the end of the cooking process, keep a close eye on the compote to prevent burning, since the liquid will have almost evaporated (leave about 1/4 cup of liquid for use later in the recipe). Remove from heat and let cool completely.
  2. To make the custard cream: Dissolve the cornstarch well in about 3 tablespoons of whole milk. Fill the measuring can with the remaining amount of milk and pour the milk and dissolved cornstarch into a medium stainless steel saucepan. (Since the mixture will be whisked, please do not use an aluminum saucepan since the whisk will scratch the bottom of the aluminum pan, causing chemical contamination as well as altering the color of the mixture). Then, stir in the condensed milk, egg yolks, and vanilla bean seeds (if you are making yours with vanilla extract, add it to the mixture when it is cooked and just about to be removed from the heat). Whisk the mixture over medium heat for about 8-10 minutes or until it just starts to thicken. Then, reduce heat to medium-low and use a wood spoon to continue stirring the mixture for about 4-5 minutes, resulting in a creamy and thickened mixture (yet thinner than a typical cake batter). Again, my mixture was cooked on a large burner. If you are using a small burner to cook this mixture, it will take almost double of the amount of time given above. Remove from the heat, transfer custard cream to a glass container, place a sheet of plastic wrap right on the top of the custard cream (touching the custard), and let cool down on a rack (the plastic wrap will prevent a skin from forming on top of the custard). When mixture cools completely, its texture will be quite thick and creamy, similar to a pastry cream.
  3. To make the chantilly cream: Using the egg whisker of an electric mixer, beat egg whites on high speed until stiff, about 2 minutes. Add the sugar and beat for about 30 seconds on medium speed. Then, add both the heavy cream and vanilla extract, and beat for about 15 seconds on low speed.
  4. To assemble the trifle: In a standard-size loaf baking pan, pour in the Chantilly cream in an even layer. Freeze with the pan sitting on a even surface or shelf for about 45 minutes. Remove from the freezer, and pour custard cream on top in an even layer. Freeze for about 45-60 minutes. Then, remove from the freezer, take cinnamon stick out of the pineapple compote, and using a slotted spoon, spoon the cooked pineapple cubes evenly over the dessert, making sure that almost no liquid is spooned onto the loaf pan. Reserve about 1/4 of the liquid in the refrigerator. Cover pan with plastic wrap and freeze trifle for at least 24 hours. Right before serving, unmold frozen trifle and let soften for about 4-5 minutes at room temperature. Drizzle a little bit of the reserved refrigerated pineapple liquid on top of the trifle if desired, decorate as you wish, and slice to serve. Enjoy!

Chocolate Pudding Ice Cream Pie

The Fourth of July, America’s Independence Day, is just around the corner.  Last year we celebrated with mouthwatering Grilled Chicken Legs Wrapped in Bacon (Churrasco de Frango).   But this year we will be celebrating the date with none other than a summery Chocolate Pudding Ice Cream Pie… And since we’re making it for America’s birthday, in a manner of speaking you could even say we will be making some “American Pie,” like the famous song that’s even now playing in my head.  🙂

This recipe  also represents our contribution for the month of July to the Chocolate Party hosted by Roxana’s Home Baking.  Our secret ingredient this time is ice cream!!!  But don’t forget about our other equally delicious previous Chocolate Party treats: Chocolate-Strawberry Slump and White Chocolate-Cherry Pie Bars.

Now, I know, I know… some folks might reasonably be asking: ” Why do you, as a Brazilian,  celebrate America’s Independence Day?”

My answer is simple: “My beloved Brazil is my mother land, but the United States is my ‘father’ land.”  Huh?!  By this I mean that  the United States is the country that I came to know later– it is where I live by choice.  Moreover, I legally became an American citizen several years ago — by choice!  And do you know what?  Just as I love my biological mother and father, I love both countries — A LOT!!!  I have been molded, culturally speaking, by both countries.  And I am grateful for and to both!!!  So just as I celebrate the Independence of Brazil every September 7th, I also celebrate America’s birthday every 4th of July.  The difference is,  I celebrate Brazil’s Independence as a proud native Brazilian, and America’s as the American that I am — not by birth, but in heart.  That means a lot to me… For those who have experienced only one citizenship it might be hard to fully comprehend.  But not for me, as I stand for two countries.   I know exactly who I am, and how much of an honor it is to be a citizen of both countries — despite each of our/their respective problems and adversities…

  1. In a large bowl, whisk melted ice cream and pudding mix for 2 minutes. Pour into graham cracker crusts.
  2. Freeze chocolate pudding ice cream pies for at least 8 hours or until firm. Garnish top of the mini pies with berries and whipped cream if desired -- and serve!!! ; or decorate according to the instructions below.
  3. To decorate pies (optional): Roll out thawed pie crust over a floured surface. With a pastry wheel or sharp knife, cut about several 1/4-in.-wide strips (about 3 for each mini pie). The length of the stripes will be about 3 inches long. With a cookie cutter, cut 2 mini stars for each pie from remainder of the crust.
  4. Brush strips and stars with beaten egg; sprinkle with sanding sugar.
  5. Preheat oven to 400°F. Line one or more baking sheet with parchment paper. Arrange stripes and stars on the baking sheet (s) and bake for about 8 minutes or until pastry is lightly golden brown. Place on wire rack and cool completely. Decorate top of the frozen chocolate pudding ice cream pies with both the berries and pastry. Serve immediately!

As a Brazilian having lived in the United States of America for 10 years so far, I do celebrate its Independence on the 4th of July, just as I celebrate the Independence of Brazil every September 7th. I will be celebrating it with Churrasco de Frango com Bacon (Grilled Chicken Legs Wrapped in Bacon) this year.

I was not born American, but I legally became one after a few years of living here.  My husband is American by birth, as well as my 2 precious children.  I have learned to love this country and to be grateful for the freedoms that we enjoy here every day. churrasco

On America’s birthday, I like to watch the fireworks, and to enjoy all of the grilling involved– or at least to watch my husband grilling :).  So this year, I chose a recipe to share with you: Grilled chicken drumsticks wrapped in bacon or churrasco de frango.  This simple Brazilian recipe is a real crowd-pleaser and a very fitting one to celebrate the joyous occasion.  Don’t you agree?

Instructions
  1. In a large bowl, mix all the ingredients together well, except the bacon. Place half into a 1 gallon heavy-duty ziploc bag and the other half into another ziploc bag. Remove the air, and zip. Refrigerate the bags inside a clean bowl and let the drumsticks marinate for at least 2 to up to 8 hours, flipping the bags at least once.
  2. Remove drumsticks from bags with tongs and place on a baking sheet. Remove all the excess oregano from the surface of the drumsticks (this is to prevent the chicken from becoming bitter once grilled). Pour marinade into a separate container and reserve it to baste the drumsticks while grilling.
  3. Wrap each drumstick with one slice of bacon.
  4. If you do not have a long Brazilian barbecue skewer, you can place drumsticks directly onto the grill and carefully monitor cooking times, basting occasionally while the meat is grilling. If you do have a Brazilian barbecue skewer, skewer the drumsticks one by one (crosswise), being careful not to cut yourself.
  5. Please ensure that the length of meat on the skewers will not exceed the diameter of your grill. It is also important to allow enough room so that the handle of the skewer, which is traditionally made of wood, will lie at a distance well away from the flame and heat of the grill.
  6. Before grilling, please be sure to scrape/clean any residual carbon from the metallic surface in order to avoid flame-ups. Start up the grill, which can either be a charcoal-heated or gas grill. If using a gas grill, set the temperature to medium and close the lid in order to allow it to heat up. If a charcoal grill is used, light the briquets, and then when they are fully heated and well ashed-over (about 30 minutes), evenly distribute over the bottom of the grill.
  7. Place each skewer onto the grill. I would suggest placing skewers slightly away from the hottest, most central portion of the grill, in order to reduce the risk of burning the outside of the meat before the inside has fully cooked. Lower the lid on the grill, and let cook for about 5 minutes. Flip each skewer over in order to ensure even grilling on each side. Allow to cook for about 10-15 minutes more. Check to make sure the drumsticks are fully cooked (one can check with a meat thermometer to ensure a minimum temperature of 165 F has been achieved or, if needed, one drumstick can be sliced open to make sure the center has sufficiently cooked through).
  8. The dish can be accompanied by a tropical salad, any other fresh salad, or grilled corn, and caipirinha or any other beverage or drink of your preference.
